Kids Favourite Veggies Loaded Creamy White Sauce Pasta By Raji's Smart Kitchen "Cook Food in a Smart Way".


Pasta is one of the favourite dish all over the world especially kids which is made of flours like wheat,maida,millets,etc.,There are so many pastas available in market based on the shapes like spaghetti,macaroni(elbow),penne,fusilli(spiral),farfalle(bow tie),shell which is used to cook yummy recipes like garlic pasta,masala macraroni,mac & cheese,pesto pasta,white pasta,pasta salads & Soup,red pasta,fusioned pasta and so on.Here I share the recipe of how to make Kids Favourite Veggies Loaded Creamy White Sauce Pasta that I have tried.

For my son,pasta is one of the favourite food,so I take pasta as base and included more veggies that I can,so he can also eat veggies.If mommies of veggies hater kids can follow this step so they can start eatting veggies because most of the kids loves pasta.Here I include the veggies like sweet corn,carrot,spinach(palak/keerai),capsicum.You can also include veggies like broccoli,beans,mushrooms,green peas,cauliflower,zucchini,etc.,

For pasta recipes,we need a sauce,for this recipe we need white sauce.Nowadays we are in busy schedule,maximum we try to cook food in one pot for time consuming and also minimise the pans used for cooking.So here I prepare the sauce along with the recipe itself(no seperate sauce is prepared).It adds great taste to this recipe. Come on lets see the required ingredients and the step by step instruction for this recipe.

Ingredients:

Macraroni Pasta 1 Cup.
Onion(Sliced) 1 Small Size.
Garlic(Finely Chopped) 3 to 5 Nos.
Tomato(Finely Chopped) 1/2 No.
Capsicum(Finely Chopped) 1/2 No.
Finely Chopped Vegetables(Sweet Corn,Spinach,Carrot) 1 Cup.
Wheat Flour 1 Tbsp.
Milk 1 Cup.
Black Pepper Powder as Required.
Red Chilly Flakes as Required.
All Purpose Seasoning as Required.
Cream Cheese 1 Tbsp.
Butter 1 Tbsp.
Oil 6 Tsp.
Salt as Required.
Water as Required.
Fresh Basil Leaves for Garnishing.

Step By Step Instructions:
  • First we want to cook the pasta,for that heat 3 cups of water(or you can use hot water for time consuming) in a pan.Add 3 tsp oil,2 tsp salt to it and stir it well.Add pasta and cook it for 5 minutes(If you use wheat pasta it can take 7 to 10 minutes to cook).Strain the leftover water.Keep it aside.
  • Heat 1 tbsp butter along with 3 tsp oil in a pan so that the butter won't becomes brown,add garlic and onion and fry it for 1 minute.
  • Now add all the veggies to it and fry it for 2 minutes.
  • Add 1 tbsp wheat flour(you can add any flour) to it and fry it well until the light aroma comes out.
  • Add milk and give a good mix.
  • Add pepper powder,red chilly flakes,all purpose seasoning and the required salt.Stir it well.
  • Add required water to it,mix and cook it for 5 minutes.
  • Add cream cheese(You can also use normal grated cheese) to it amd mix it well then the sauce becomes thicken.
  • Now add the cooked macaroni to it.Give a good mix.
  • Turn off the stove,Garnish with some freshly chopped basils(you can add any fresh herbs).
  • Serve hot.

Cook the pasta by adding salt and oil.Keep it aside.


Heat butter and oil in a pan.


Fry onion and garlic.


Add veggies and fry.


Add wheat flour.


Fry it well until aroma comes out.


Add milk and allow it to boil.


Add all the spices and seasonings.Add required salt.Give a good mix.


Add required water and cook the veggies.


Add cream cheese and mix.


Add the cooked pasta to it and mix it well.


Turn off the stove.Garnish with any fresh chopped herbs(Here I am using basil).


Now our Yummy Kids Favourite Veggies Loaded Creamy White Sauce Pasta is Ready.Serve hot.

Heat 3 tsp oil and 1 tbsp butter in a sauce pan,add 1 tbsp flour,roast it well until light aroma comes out.Add 1 cup of milk(room temperature) and stir it continously till it becomes thick(Make sure there is no lumps occur).Turn off the stove,add required salt,pepper and seasonings to it and mix it well.Now our White Sauce is ready.
You can also use this sauce in making pastas,sandwiches,casseroles,dips,salads,etc.,

Serving Suggestions:

This recipe can be served with toasted bread which gives a good taste.

Healthy Valathandu Thovaran(Banana Stem Stir Fry) By Raji's Smart Kitchen "Cook Food in a Smart Way".


Thovaran is one of our traditional dry side dish recipe in our place especially served in lunch which is made of vegetable or egg or meat combined freshly grinded coconut mixture.People in our place has nicknamed this recipe as thoran.We can make thovaran like raw banana thovaran,carrot and beans thovaran, beetroot thovaran,amaranthus thovaran,mix veg thovaran,egg thovaran,chicken thovaran,etc.,Here I share the recipe of how to make banana stem thovaran that was teached by My Mother.

Banana stem can prevent the formation of stones in the kidney.So we include banana stem regularly in our diet.In our native place Kanyakumari we get different varieties of banana stem from different banana trees.Some of the name I mention here like rasakadhali,matti,peiyan,senthuluvan(red banana),ethan(nendran),thuluvan,karpooravali(green banana).Each banana stem has different taste.We cook banana stem pulicurry(tamarind curry) or thovaran alternatively because these are our traditional dish so everyone in our family loves to eat it.For kids, we can serve by mixing it with the plain rice so that they can easily eat this type of veggies.Today I share the recipe of banana stem thovaran which is a simple side dish and becomes the great combination with sambhar rice.Come on lets see the required ingredients and the step by step instruction for this recipe.

Ingredients:

Banana Stem(Finely Chopped) 1 Piece.
Dry Red Chilly 1 or 2 Nos.
Water as Required.
Salt to Taste.
Urud Dal 1 Tsp.
Mustard Seeds 1 Tsp.
Coconut Oil 2 Tsp.
Curry Leaves Few.

For Ground Mixture:

Grated Coconut 1/4 Cup.
Garlic Cloves 1 No.
Cumin Seeds(Jeera) 1 Tsp.
Turmeric Powder 1/4 Tsp.
Red Chilly Powder 1 Tsp.

Step By Step Instructions:
  • First we want to peel the skin of the banana stem.Chop it finely as like micro cubes and put it in the water to avoid colour change.Wash it well and strain the leftover water.Keep it aside.
  • Heat coconut oil in a pan,add mustard seeds,urud dal,dry red chilly,season it well.Add few fresh curry leaves.
  • Now add the banana stem along with required salt to it and saute it until all the water releases out and it becomes dry.
  • Add little water and cook the banana stem well.
  • Then we make the coconut mixture for that we take a mixie jar,add grated coconut,garlic clove,cumin(jeera),turmeric powder,red chilly powder.Grind it a coarse mixture using pulse mode without adding water(you can refer pictorial description).
  • After all water evaporates,add the grinded coconut mixture to it,mix and fry it well for 2 to 3 minutes.
  • Garnish with few fresh curry leaves.Our Yummy and Healthy Valathandu Thovaran(Banana Stem Stir Fry) is ready.Serve as side dish for lunch.


Pictorial Description:

Take a mixie jar,Add all the ingredient given in ground mixture.


Grind it in pulse mode without adding water.Keep it aside.


Chop the banana stem finely.


Heat coconut oil in a pan and prepare seasoning.


Add banana stem and salt.


Fry it well until water released out.


Add little water and cook.


Add the ground mixture.


Mix and fry for 2 to 3 minutes.Turn off the stove,add few curry leaves.


Now our Yummy and Healthy Banana Stem Thovaran is Ready.


Note:

While Chopping banana stem,first we remove all the outer layers,round slice the stem,there is threads like fibres comes out in each slice,remove it all.Then fine chop the banana for this recipe.
After chopping simply put it in water immedietely so that we can avoid colour turned into black and also don't put it in water for more time,cook it immediately.

Serving Suggestions:

This Healthy Banana Stem Thovaran can be served with rice combined with spicy curry like sambhar,theeyal,pulicurry,kara kuzhambu.

Poori Onion Masala(Poori Vengayam Masala/Poori Pyaz Masala) with Super Tips for Soft and Puff Poori By Raji's Smart Kitchen "Cook Food in a Smart Way".


Poori(Fried Indian Bread) is one of the all time favourite food of Indian Food which can be served with potato masala,veg handi,Veg Stew,Aloo Mutter Gravy,White Kurma.Here I share the recipe Poori Masala recipe only using onions that I have tried and I am also add some Super Tips for Soft and Puff Poori.

Recipe Overview:

In this Post I share the recipe Poori Onion Masala(Poori Vengayam Masala/Poori Pyaz Masala).In our place,most of them cook potato masala for poories so that many people avoid eatting of poories due to fear some gastric problem caused by potatoes in potato masala.For that I tried this recipe poori masala only using onions which gives the same taste as potato masala and I also include how to make soft and puff poories with some tips. Come on lets check the ingredients and step by step procedure for this recipe.

Ingredients:

For Onion Masala:

Onion(Sliced) 4 Nos.
Green Chilly 1 or 2 based on the Spicyness.
Pounded Ginger 1 Inch.
Turmeric Powder 1/4 Tsp.
Chana Dal 1 Tsp.
Urud Dal 1 Tsp.
Mustard Seed 1 Tsp.
Curry Leaves Few.
Salt to Taste.
Water as Required.
Coconut Oil 3 to 4 Tsp.
Coriander Leaves for Garnishing.

For Poori:

Salt 2 Tsp.
Water as Required.

Step By Step Instructions:
  • For Onion Masala,heat coconut oil in a pan.Season with mustard seeds,urud dal,channa dal and curry leaves.
  • Add green chilly.
  • Add onion and fry until soft not brown.
  • Add besan flour(kadalai maavu) to it and fry it well until aroma comes out.
  • Add required salt and 1/4 tsp turmeric powder to it,mix and fry it well.
  • Add required water,mix,cover and cook it for 5 minutes.
  • Thats all our poori onion masala is ready.Garnish with coriander and curry leaves.
  • For poori,take 2 cups of wheat flour in a mixing bowl.Add 2 tsp salt,give a good mix(Tip 1:For poori,we add only wheat flour and salt,no nead to add oil,sugar as like chapathi so that the poori won't absorbs oil).
  • Add little water,knead it to form a hard dough(Tip 2:The dough must be little hard so that it becomes easy to roll without dusting flour or oil.We make poories immedietely once the dough is kneaded,no resting time).
  • Seperate the dough into small balls(Tip 3:Small size poories gives more tastier than bigger one).
  • Roll it out.
  • Heat oil for frying(Tip 4:For making poories,the oil must be in high heat then only the poori puffed up and also it absorbs less oil).
  • Put the poori in the oil.Tap/press it with the back of strainer/spoon and allow it to puff.Fry on both sides.
  • Now our Soft and Puff Poories are ready.Serve hot with Onion Masala.

Heat coconut oil in a pan,season with mustard seeds,urud dal,chana dal,curry leaves.


Add green chilly.


Add onion and fry it well until soft not brown.


Add besan flour(Kadalai maavu) and fry it well until aroma comes out.


Add turmeric powder and required salt to it and fry it well.


Add required water.


Mix it well.


Cover and cook it for 5 minutes.


Now it is cooked well.


Now our Onion Masala for Poori is ready.Garnish with coriander and curry leaves.


For Poori,Take 2 cups of wheat flour and 2 tsp salt in a mixing bowl(For Tips refer step by step instruction section).


Add little water and knead it to form a hard dough.


Seperate into small balls.


Roll it out.


Heat oil for frying.


Add the poori.


Tap or press the poories with the back of the strainer/spoon.


Now our Soft and Puffy Poories are Ready.


Serve hot with Onion Masala.
