Recipe Overview:
In this Post I share the recipe Tamilnadu Special Brinjal Kara Kulambhu(Brinjal Spicy Curry). First we soak lemon size tamarind in water for 1/2 an hour to extract juice.Then we fry onion,garlic,tomato in sesame oil(gingelly oil/till oil) along with some seasonings and spice powders.Then we add the brinjals and fry it until color change.Add the tamarind juice and allow it to boil until the brinjals cooked well.Garnish with Coriander Leaves. This Dish can be the served with hot rice.
Method:
Ingredients:
Brinjal(Cubed/Roughly Chopped) 250 gms.
Tamarind Lemon Size Soaked in 1 Cup of Water.
Onion 2 No(Finely Chopped).
Tomato 2 No(Finely Chopped).
Garlic Cloves 5 to 6 Nos..
Turmeric Powder 1/4 Tsp.
Red Chilly Powder 1 Tbsp.
Coriander Powder 1 Tbsp.
Salt to Taste.
Fennel Seeds(Saunf/Perunjeeragam) 1/2 Tsp.
Fenugreek Seeds(Methi/Vendhayam) 1/2 Tsp.
Dry Red Chilly 1 or 2 Nos.
Asafoetida(Hing) 1/4 Tsp.
Curry Leaves Few.
Water as Required.
Sesame Oil 1 Tbsp.
Coriander Leaves for Garnishing.
Step By Step Instructions:
- Heat sesame oil in a pan.Season with fennel seeds,fenugreek seeds,dry red chilly,asafoetida and curry leaves.
- Add some garlic cloves and fry.
- Add the onion and fry.
- Add the tomato and fry.
- Add Salt and fry.
- Add turmeric powder,red chilly powder,coriander powder and fry it well until it turns into gravy state.
- Now add the brinjals and fry it well until the color of the brinjal change.
- Add the tamarind soaked water to it and boil until the brinjal cooked well.
- Garnish with some coriander leaves.Now our Tamilnadu Special Brinjal Kara Kulambhu(Brinjal Spicy Gravy) is ready.
- Serve with hot rice.
