Ingredients:
Mixed Vegetables 1 Cup(Cubed).
Onion 2 Nos.(FinelyChopped).
Tomato 2 Nos(Finely Chopped).
Ginger Garlic Paste 2 Tsp.
Cream 1/4 Cup.
Dry Fenugreek Leaves(Kasturi Methi) Few.
Water as Required.
Oil 6 Tbsp.
Salt to Taste.
Sugar to Taste.
Coriander Leaves for Garnishing.
For Kadai Masala:
Coriander Seeds 1Tbsp.
Sesame Seeds(Ellu/Till) 1 Tsp.
Black Cardamom(Badi Elachi) 1.
Green Cardamom(Hari Elachi/Ellakkai) 1.
Cumin Seeds(Jeera) 1/2 Tbsp.
Cinnamon(Pattai/Dalchini) 1 inch.
Red Chilly Powder 1 Tbsp.

For Kadai Masala:
Coriander Seeds 1Tbsp.
Sesame Seeds(Ellu/Till) 1 Tsp.
Black Cardamom(Badi Elachi) 1.
Green Cardamom(Hari Elachi/Ellakkai) 1.
Cumin Seeds(Jeera) 1/2 Tbsp.
Cinnamon(Pattai/Dalchini) 1 inch.
Red Chilly Powder 1 Tbsp.

- For Kadai Masala, Heat a Pan.
- Add all the Whole Spices except Red Chilly Powder and fry until the aroma comes out.
- Transfer it into a mixie jar.
- Now add Red Chilly Powder to it.
- Grind it to a fine powder.
- Heat 2 Tbsp Oil in a Pan.
- Add Onions and Fry until it turns golden brown color.
- Add Ginger Garlic Paste and fry until raw smell goes out.
- Add Tomatoes to it and fry.
- Add Salt and Sugar to it.
- Fry until it forms into gravy state and keep aside.
- Heat 4 Tbsp Oil in another Pan.
- Add all the Cubed Vegetables.
- Fry it for 2 Minutes.
- Add the prepared Kadai Masala to it.
- Fry it well.
- Add required water to it.
- Cover and boil until the vegetables completely done.
- Add the Onion Tomato Gravy that we already prepared and mix it well.
- Add the Cream to it and boil until the gravy becomes thicken.
- Add few Dry Fenugreek Leaves(Kasthuri Methi) to it and fry for 1 minute.
- Garnish with Coriander Leaves.
- Serve with Roti,Chapathi,Naan,Paratha.
