Mouthwatering Marriage Buffet Special Vegetable Brinji Rice By Raji's Smart Kitchen "Cook Food in a Smart Way".

I hope you all are fine.Rice is one of the most consumed food in India.We make many different variety rice dishes daily like pulav,puliyogare,lemon rice,briyani,etc.,In this blog I post a very famous rice recipe which is compulsorily served as one dish in buffet lunch of marriage function in Tamilnadu.Here I share that recipe of how to make a Mouthwatering Marriage Buffet Special Vegetable Brinji Rice which I have tried.

Now lets us know about this recipe.In tamil bay leaves can be named as brinji illai so this rice recipe can be named as Vegetable Brinji because of the flavour of bay leaves dominated more.Here we cook the rice in coconut milk also gives a rich taste.Now lets know about the ingredients used in this recipe.Here I use basmathi rice for this recipe,you can also use seeraga sambha rice if you prefer.Soaking rice is the important step,you can soak the rice for minimum half an hour and maximium 2 hours so that the rice can be easily cook as well as we get a long rice. Next the coconut milk,here I take 1 1/2 cup rice for that we add totally 3 1/2 cups of water for that I take 1 cup of thick coconut milk and 2 1/2 cup of water.You can also use the thin milk instead of water.Next is vegetables,here I use carrot,peas,beans,broccoli,potato,you can add vegetables as per your choice. Come on lets see the required ingredients and the step by step instruction for this recipe.

Preparation Time: 30 Minutes Cooking Time: 20 Minutes Serving: 4

Ingredients:

Basmathi Rice 1 1/2 Cup.
Mix Vegetables(Carrot,Green Peas,Cauliflower,Beans,Broccoli,Potato)(Cubed) 1 Cup.
Onion(Sliced) 2 Nos.
Bay Leaves 5 to 6 Nos.
Green Cardamom 3 Nos.
Cinnamon Sticks 2 Nos.
Cloves 5 Nos.
Butter 2 Tbsp.
Coconut Milk 1 Cup.
Water 2 1/2 Cups.
Salt as Required.
Mint Leaves Few.
Curry Leaves Few.
Coriander Leaves Few.

Ingredients for Coarse Paste:

Green Chilly 3 Nos.
Garlic Cloves 7 to 8 Nos.
Ginger 1 inch.
Fennel Seeds(Saunf/Sombhu) 1/2 Tsp.


Step By Step Instructions:
  • Soak the basmathi rice for minimum half an hour so that the rice can easily cook as well as the length of the rice becomes long.
  • For this rice we want to make a paste for that take a mixie jar,add green chilly,ginger,garlic and fennel seeds.Grind it into a coarse paste.Keep it aside.
  • Heat butter in a pot along with coconut oil so that the butter can't burnt.Add bay leaves,cloves,cinnamon and curry leaves.
  • Add sliced onions and saute it until soft not brown.
  • Add the grinded coarse paste to it and saute it until raw smell goes out.
  • Add few mint leaves and saute.You can also use dry mint leaves.
  • Add vegetables along with required salt and saute it well until the veggies are half done.
  • Now add the soaked basmathi rice to it and give a good mix.
  • Add 1 cup of coconut milk,2 1/2 cup of water along with required salt(the taste of the water must be little bit salty).Give a good mix,cover and cook it for 6 to 7 minutes.
  • Now the rice is cooked well.Gice a gentle mix using fork without breaking the rice.Garnish with coriander leaves.
  • Turn off the stove cover with lid.Leave it for 10 to 15 minutes.
  • Now our Mouthwatering Marriage Buffet Special Vegetable Brinji Rice is ready.Enjoy...

Add the coarse paste ingredients in a mixie jar.


Grind it into a coarse paste.


Heat butter in a pot,add bay leaves,cardamom,cloves,cinnamon and curry leaves.


Add onion and saute.


Add the grinded paste.


Add mint leaves and saute until raw smell goes out.


Add vegetables.


Add required salt and fry for 2 to 3 minutes(half done).


Add the soaked rice.


Add 1 cup coconut milk,2 1/2 cups of water along with required salt.Give a good mix.


Cover and cook for 6 to 7 minutes.


Now our rice is cooked well.Gently mix it using fork.


Garnish with coriander leaves.


Now Our Mouthwatering Marriage Buffet Special Vegetable Brinji Rice is ready.Enjoy...


Note:

You can also cook this recipe in pressure cooker.For 1 cup of rice,you need to add 3/4 cup of coconut milk and 1 cup of water.Pressure cook for 1 whistle.

Serving Suggestions:

This rice recipe can be served with raitha,simple vegetable stir fry and papads.

Tomato Tamarind Rice By Raji's Smart Kitchen "Cook Food in a Smart Way".


Tomato Tamarind Rice is one of the popular rice variety of South Indian Cuisine.Usually we cook tamato rice in basmathi rice by mixing garam masalas but in this recipe we won't use any garam masalas and this recipe can be prepared using our regular rice.We also add tamarind pulp in it so that rice not easily become spoil for some hours.So this Tomato Tamarind Rice can become a prefect lunch box as well as travel time recipes.Here I shared the recipe of Tomato Tamarind Rice that I have tried based on the cookery show of Chef Dr. K. Damodharan.

On that day of Tauktae Cyclone,we face some power failure due to severe wind.So I decided to prepare food for both lunch and dinner at a same time.I planned to prepare any rice varieties so that I go through my recipe diary,there I found a recipe for Tamato Rice which I had written based on the cookery show of Chef Dr. K. Damodharan.It was a different tamato rice made with basic masalas and tamarind.I cooked that rice which was awesome taste and long last for the whole day. With this rice I made a Brinjal Egg Roast as side dish which becomes a perfect combination.Come on lets see the required ingredients and the step by step instruction for this recipe.

Preparation Time: 10 Minutes Cooking Time: 20 Minutes Serving: 6

Ingredients:

Rice 2 Cups.
Onion(Sliced) 3 Nos.
Tomato(Roughly Chopped) 3 nos.
Ginger Garlic Paste 1 Tbsp.
Green Chilly 2 to 3 Nos.
Turmeric Powder 1/4 Tsp.
Red Chilly Powder 1 Tsp.
Coriander Powder 1 Tsp.
Pepper Powder 1/4 Tsp.
Tamarind Gooseberry Size.
Salt to Taste.
Mustard Seeds 1 Tsp.
Urud Dal 1 Tsp.
Dry Red Chilly 1 or 2 Nos.
Sesame Oil(Gingelly Oil/Til Oil/Nallennai) 1 Tbsp.
Cooking Oil 1 Tbsp.
Water as Required.
Curry Leaves(Finely Chopped) Few.
Coriander Leaves for Garnishing.


Step By Step Instructions:
  • Soak the tamarind in water for 10 to 15 minutes to extract the tamarind juice.
  • Heat sesame oil,cooking oil together in a wide pan.Season with mustard seeds,urud dal,dry red chilly,green chilly and curry leaves.
  • Add onion and fry it well until golden brown.
  • Add ginger garlic paste and fry it well until the raw smell goes out.
  • Now add the tomatos and fry for 1 minute.
  • Add the turmeric powder,red chilly powder,coriander powder,pepper powder and required salt to it and fry it well until raw smell goes out.
  • Now add the tamarind juice and cook it for 2 to 3 minutes.
  • Now add the rice,mix it well.
  • Add 6 to 7 cups of water to it.Add required salt(the taste of the water must be little salty).Cover with lid and allow it to cook for 15 to 20 minutes.
  • Now our Tomato Tamarind Rice is ready.Garnish with few fresh coriander leaves.Enjoy....

Note:

The rice I am used here is not presoaked.If you want to soak,then soak the rice for 1 hour and adjust the water added for cooking to 3 to 5 cups.
Here I used both sesame as well as normal cooking oil,You can also use pure sesame oil also.

In this Post I share the recipe Simple Brinjal Rice. It is one of the simple easy rice recipes which becomes a perfect lunchbox or travel dish.In this recipe I used Tamilnadu Special Kuzhambhu Millagai Masala powder(Tamilnadu Special Mixed Spiced Masala Powder).It is one of the important masala powder in Tamilnadu Cuisine which is used to prepare many kuzhambu(curry),poriyal(fry),etc.,For preparing this powder,you want to dry roast the following ingredients given below and blend it to a fine powder.This powder can be stored upto 6 months in a air tight container.
Dry Gundu Red Chilly(Dry Cherry Chilly) 25 Nos.
Coriander Seeds(Kothamali/Dhaniya) 5 Tbsp.
Cumin Seeds(Jeera) 2 Tbsp.
Black Pepper(Nallamilagu/milagu/kali mirch) 1 Tsp.
Toor Dal(Sambhar Paruppu) 1/2 Tsp.
Channa Dal(Kadalai Paruppu) 1 Tsp.
ParBoiled Rice(Pulungal Rice) 1 Tsp.
Urud Dal(Ulundhu) 1/2 Tsp.
Fenugreek Seeds(Vendhayam/Uluva/Methi) 1/8 Tsp.
Turmeric Powder 1 1/2 Tsp.

Cooked Rice 1 Cup.
Binjal(Chopped Lengthwise) 250 gms.
Tamarind Gooseberry Size.
Green Chilly 1 or 2 Nos.
Turmeric Powder 1/4 Tsp.
Kozhambu Milagai Powder(Mixed Spiced Masala Powder) 1 Tbsp.
Asafoetida(hing) Powder    1/4 Tsp.
Dry Red Chilly    2 Nos.
Channa Dal 1 Tsp.
Urud Dal 1 Tsp.
Mustard Seeds    1 Tsp.
Sesame Oil(Nallennai/Til Oil) 1 Tbsp.
Salt to Taste.
Water as Required
Curry Leaves    a Handful.

Step By Step Instructions:
  • Soak Tamarind in water for extracting juice.
  • Heat oil in a pan.
  • Add urud dal,mustard seeds,channa dal,dry red chilly,asafoetida powder,curry leaves and season it well.
  • Add green chilly.
  • Add brinjal,turmeric powder,required salt and fry for 1 minute.
  • Add Kozhambu Milagai Powder(Mixed Spiced Masala Powder) and fry it well for 2 to 3 minutes.
  • Add tamarind water to it.
  • Boil it for 2 to 3 minutes or until oil seperates.
  • Add the cooked rice to it.
  • Gently mix the rice with fork.Add few curry leaves.
