Nei Soru(Ghee Rice)


Ghee Rice is one of the traditional rice variety which is made by the combination of rice,ghee,whole spices and vegetables. Here I shared the recipe of Ghee Rice that I have tried.

Ingredients:

Basmati Rice 1 Cup.
Onion 2 Nos(Sliced).
Tomato 1 No(Sliced).
Green Chilly 3 Nos.
Ginger Garlic Paste 1 Tsp.
Green Cardamom 1 No.
Black Cardamom 1 No.
Cinnamon 1 inch.
Cloves 2 Nos.
Star Anise 1 No.
Marathi Moggu 1 No.
Black Pepper 5 Nos.
Bay Leaves 1 Leaf.
Shah Jeera 1 Tsp.
Cashew-nuts Few.
Ghee 3 Tbsp.
Water 2 Cups.
Salt to Taste.
Curry Leaves Few.
Fried Onion for Garnishing.
Coriander Leaves for Garnishing.

Method:
  • Wash and Soak 1 Cup of Basmati Rice for minimum  1/2 an hour.
  • Chop the Vegetables as mentioned above.
  • Heat Ghee in a Pressure Cooker.

  • Add all the Whole Spices and Cashew-nuts and fry till aroma comes out.

  • Add Green Chilly and Curry Leaves to it.

  • Add the Onion and Salt and fry until onion becomes soft. Note the Onion should not turns into brown.

  • Add Ginger Garlic Paste and fry.
  • Add Tomato and Coriander Leaves and fry for 30 seconds.
  • Add the Basmati Rice to it.
  • Add 2 Cups of Water and check the Salt.
  • Pressure Cook it for 1 whistle in high flame and 1 whistle in low flame.
  • After releasing pressure, the rice looks like this.
  • Garnish with some Fried Onions and Coriander Leaves.
  • Serve hot with some Gravy or Non veg Curry.
