Chole Masala


Chole Masala is one of the most popular recipe of Indian Cuisine made of Boiled Channa and some spices is the perfect sidedish for Chapathi,Poori,Bhature,Appam.

Ingredients:
Channa 1 Cup.
Onion    3 Nos Finely Chopped.
Tomato    2 Nos Finely Chopped or Pureed.
Green Chillies    2 Nos Chopped.
Ginger Garlic Paste    2 Tsp.
Turmeric Powder    1/4 Tsp.
Kashmiri Red Chilly Powder    1 Tsp.
Coriander Powder    1/2 Tsp.
Garam Masala    1/2 Tsp.
Cumin or Jeera Powder    1/4 Tsp.
Dry Mango Powder or Amchur Powder    1/4 Tsp.
Chole Masala    1 Tsp.
Kasturi Methi or Dry Fenugreek Leaves    Few.
Fresh Cream    1 Tbsp.
Curry Leaves    Few.
Mustard Seed or Kaduku or Rai    1 Tsp.
Jeera or Cumin    1Tsp.
Oil    1 Tbsp.
Sugar 1/4 Tsp.
Salt to Taste.
Coriander Leaves for Garnishing. 
    
Method:
  • Soak the Channa for 3 to 4 hours or overnight.
  • Pressure Cook the Channa for 7 whistle.

  • Finely Chop the vegetables as needed.
  • Heat oil in a pan and season with Mustard(Rai) and Cumin(Jeera).
  • Add the finely chopped Onion and fry for a while.
  • Add the Curry Leaves and Green Chillies to it.
  • Fry the Onion until golden brown color.
  • Add the Ginger Garlic Paste and fry until raw smell goes off.
  • Add the finely chopped or pureed Tomatoes to it.
  • Add the Salt and Sugar.
  • Fry them until oil comes out.
  • Add all the Spice Powders except Chole Masala.
  • Add the Kasturi Methi to it.
  • Fry until the raw smell of the spice powder goes out.
  • Now add the Boiled Channa to it without wasting the water.
  • Add the Chole Masala to it and mix well.
  • Now add the required water and boil it until oil comes out.
  • For more richness or restaurant style add 1 Tbsp of Fresh Cream and boil it for 1 minute.
  • Garnish with Coriander Leaves.
  • Serve it with Hot Chapathies, Bhature, Phulkas, Poories, Appam,etc,.
