Simple Kottu Paratha


Kottu Paratha is one of the famous recipe of South Indian Cuisine.

Ingredients:

Left over Paratha    2 nos.
Eggs     2 nos.
Ginger Garlic Paste    1 tsp.
Onion    1 big thinly sliced.
Capsicum    1 cubed.
Frozen Green Peas few (Optional).
Tomato    1 no thinly sliced.
Green Chilly 2Nos Slited.
Turmeric Powder 1/4 tsp.
Chilly Powder 1 tsp.
Garam Masala 1/2 tsp.
Egg Masala 1 tsp.
Pepper Powder 1/2 tsp.
Curry Leaves Few.
Mustard Seeds(Kaduku or Rai) 1 tsp.
Oil    1 tbsp.
Coriander Leaves For Garnishing.

Method:
  • Take the ingredients and chop the Paratha and vegetables.
  • Turn on the stove, place a deep pan, pour the oil and add mustard for seasoning.
  • Add the Curry Leaves and Green Chillies and fry.
  • Then add Onion and fry until soft and transparent.
  • Add Capsicum and fry for a minute.
  • Add Frozen Green Peas and fry for a minute.
  • Add the Tomato and Ginger Garlic Paste and fry until raw smell goes out.
  • Add all the spice powders except pepper powder and fry until the veggies fried fully.
  • Add 2 eggs to it and mix it.
  • Immedietely add the chopped parathas to it and mix continously until the egg and the parathas done.
  • Add the Pepper Powder and mix it.
  • Garnish with Coriander Leaves.
  • Now enjoy the Kottu Paratha.
