Mouthwatering Marriage Buffet Special Vegetable Brinji Rice By Raji's Smart Kitchen "Cook Food in a Smart Way".

I hope you all are fine.Rice is one of the most consumed food in India.We make many different variety rice dishes daily like pulav,puliyogare,lemon rice,briyani,etc.,In this blog I post a very famous rice recipe which is compulsorily served as one dish in buffet lunch of marriage function in Tamilnadu.Here I share that recipe of how to make a Mouthwatering Marriage Buffet Special Vegetable Brinji Rice which I have tried.

Now lets us know about this recipe.In tamil bay leaves can be named as brinji illai so this rice recipe can be named as Vegetable Brinji because of the flavour of bay leaves dominated more.Here we cook the rice in coconut milk also gives a rich taste.Now lets know about the ingredients used in this recipe.Here I use basmathi rice for this recipe,you can also use seeraga sambha rice if you prefer.Soaking rice is the important step,you can soak the rice for minimum half an hour and maximium 2 hours so that the rice can be easily cook as well as we get a long rice. Next the coconut milk,here I take 1 1/2 cup rice for that we add totally 3 1/2 cups of water for that I take 1 cup of thick coconut milk and 2 1/2 cup of water.You can also use the thin milk instead of water.Next is vegetables,here I use carrot,peas,beans,broccoli,potato,you can add vegetables as per your choice. Come on lets see the required ingredients and the step by step instruction for this recipe.

Preparation Time: 30 Minutes Cooking Time: 20 Minutes Serving: 4

Ingredients:

Basmathi Rice 1 1/2 Cup.
Mix Vegetables(Carrot,Green Peas,Cauliflower,Beans,Broccoli,Potato)(Cubed) 1 Cup.
Onion(Sliced) 2 Nos.
Bay Leaves 5 to 6 Nos.
Green Cardamom 3 Nos.
Cinnamon Sticks 2 Nos.
Cloves 5 Nos.
Butter 2 Tbsp.
Coconut Milk 1 Cup.
Water 2 1/2 Cups.
Salt as Required.
Mint Leaves Few.
Curry Leaves Few.
Coriander Leaves Few.

Ingredients for Coarse Paste:

Green Chilly 3 Nos.
Garlic Cloves 7 to 8 Nos.
Ginger 1 inch.
Fennel Seeds(Saunf/Sombhu) 1/2 Tsp.


Step By Step Instructions:
  • Soak the basmathi rice for minimum half an hour so that the rice can easily cook as well as the length of the rice becomes long.
  • For this rice we want to make a paste for that take a mixie jar,add green chilly,ginger,garlic and fennel seeds.Grind it into a coarse paste.Keep it aside.
  • Heat butter in a pot along with coconut oil so that the butter can't burnt.Add bay leaves,cloves,cinnamon and curry leaves.
  • Add sliced onions and saute it until soft not brown.
  • Add the grinded coarse paste to it and saute it until raw smell goes out.
  • Add few mint leaves and saute.You can also use dry mint leaves.
  • Add vegetables along with required salt and saute it well until the veggies are half done.
  • Now add the soaked basmathi rice to it and give a good mix.
  • Add 1 cup of coconut milk,2 1/2 cup of water along with required salt(the taste of the water must be little bit salty).Give a good mix,cover and cook it for 6 to 7 minutes.
  • Now the rice is cooked well.Gice a gentle mix using fork without breaking the rice.Garnish with coriander leaves.
  • Turn off the stove cover with lid.Leave it for 10 to 15 minutes.
  • Now our Mouthwatering Marriage Buffet Special Vegetable Brinji Rice is ready.Enjoy...

Soak basmathi rice for half an hour.


Add the coarse paste ingredients in a mixie jar.


Grind it into a coarse paste.


Heat butter in a pot,add bay leaves,cardamom,cloves,cinnamon and curry leaves.


Add onion and saute.


Add the grinded paste.


Add mint leaves and saute until raw smell goes out.


Add vegetables.


Add required salt and fry for 2 to 3 minutes(half done).


Add the soaked rice.


Add 1 cup coconut milk,2 1/2 cups of water along with required salt.Give a good mix.


Cover and cook for 6 to 7 minutes.


Now our rice is cooked well.Gently mix it using fork.


Garnish with coriander leaves.


Now Our Mouthwatering Marriage Buffet Special Vegetable Brinji Rice is ready.Enjoy...


Note:

You can also cook this recipe in pressure cooker.For 1 cup of rice,you need to add 3/4 cup of coconut milk and 1 cup of water.Pressure cook for 1 whistle.

Serving Suggestions:

This rice recipe can be served with raitha,simple vegetable stir fry and papads.

In this Post I share the recipe Temple Sambhar Sadam(Sambhar Rice). First we pressure cook rice and toor dal.Then we heat oil in a pan and season with some seasonings.Now we add the sambhar vegetables and fry.Then we add the spice powders and fry.Then we boil the vegetables in tamarind water.Now we add the sambhar powder and fry it well.Finally we add the cooked dal rice,ghee and mix it well.Garnish with coriander leaves and serve hot.

Ingredients:

Rice 1 Cup.
Toor Dal(Sambhar Dal) 1/2 Cup.
Onion(Roughly Chopped) 1 No.
Tomato(Roughly Chopped) 1 No.
Sambhar Vegetables(Brinjal,Lady Finger,Carrot,Drumstick,Potato,Pumpkin) 1Cup(Roughly Chopped).
Tamarind Gooseberry size soaked in 1 cup of water.
Turmeric Powder 1/4 Tsp.
Red Chilly Powder 1/2 Tsp.
Coriander Powder 1/2 Tsp.
Sambhar Masala Powder 2 Tbsp(To Buy Sambhar Powder).
Asafoetida 1/4 Tsp.
Fenugreek Seeds(Methi) 1/4 Tsp.
Cumin Seeds(Jeera) 1 Tsp.
Urud Dal 1 Tsp.
Mustard Seeds 1 Tsp.
Dry Red Chilly 2 Nos.
Ghee 1 Tsp.
Oil 1 Tbsp.
Salt to Taste.
Water as Required.
Curry Leaves Few.
Coriander Leaves For Garnishing.

Step By Step Instructions:
  • Soak rice and toor dal for 1/2 an hour.Pressure cook it for 5 whistle and keep it aside
  • Heat oil in a pan and season with mustard seeds,urud dal,fenugreek seeds(methi),cumin seeds(jeera),asafoetida(hing),dry red chilly and curry leaves
  • Add Onion and Tomato and fry it well.
  • Add all the sambhar vegetables,salt and fry it well.
  • Add turmeric powder,coriander powder,red chilly powder and fry it well.
  • Add tamarind water,cover and cook until the vegetables done.
  • Add sambhar powder to and fry it well.
  • Now add the cooked dal rice and ghee and mix it well.
  • Garnish with coriander leaves and serve hot.


Pictorial Description:

Soak rice and dal for 1/2 an hour.



Wash and transfer it to the pressure cooker.


Pressure cook it for 5 whistles.


Heat oil in a pan and season with mustard seed,cumin,urud dal,fenugreek seeds,asafoetida,dry red chilly and curry leaves.


Add onion and tomato together.


Add all the sambhar vegetables.


Add salt.


Fry it well.


Add turmeric powder,red chilly powder,coriander powder and fry it well.


Add tamarind water.


Cover and boil until the vegetables cooked well.


Now our vegetables are cooked well.


Add sambhar powder.


Fry it well.


Add the cooked dalrice and ghee to it.


Mix it well.


Garnish with coriander leaves.


Now our Temple Sambhar Sadam(Sambhar Rice) is ready.Serve hot with some mild sidedish.

Curd Rice By Raji's Smart Kitchen "Cook Food in a Smart Way"


Curd Rice is one of the popular rice dish varieties of South India.This is one of the simple and favourite lunch box recipe.Veg Fries,Pickles are the best sidedish for this recipe. Here I share the curd rice recipe that are cooked using rice/slow cooker.

Recipe Overview:

In this Post I share the recipe Curd Rice. It is one of the easiest lunch box recipes.First we cook the rice.Then the curd along with garnishing veggies to it and mix.Prepare a seasoning and pour it over the rice. Now our Curd Rice is ready. Serve with veg fries or pickles.

Ingredients:

Rice    1 Cup.
Thick Curd    1 Cup.
Grated Ginger     1 Tsp.
Grated Carrot    1/4 Cup.
Chopped Green Chilly    2 No.
Asafoetida(hing) Powder    1/4 Tsp.
Dry Red Chilly    2 Nos.
Urud Dal    1 Tsp.
Mustard Seeds    1 Tsp.
Coconut Oil    2 Tsp.
Salt to Taste.
Water 3 cups 
Curry Leaves    Few.
Coriander Leaves    for Garnishing.

Step By Step Instructions:
  • Turn on the rice cooker.Wash and add the rice to the rice cooker.Add 3 Cups of water and cook the rice.
  • Add curd,salt and asafoetida powder and mix it.
  • Add grated carrot,ginger,green chillies to it and mix well.Turn off the rice cooker.
  • Heat a tadka pan.Prepare the seasoning by adding oil,mustard seeds,urud dal,dry red chilly and curry leaves.
  • Pour the tadka over the rice and give a good mix.
  • Our Curd Rice is ready,garnish with more coriander leaves and put it in warm mode.
  • Serve hot with any veg fries or pickles.

Pictorial Description:

Turn on the rice cooker.Wash the rice and add it to the rice cooker.


Add 3 cup of water to it and cook well.


Add curd,salt,asafoetida powder and mix well.


Add carrot ginger and green chilles and mix well.Turn off the stove.


For tadka,heat oil in a pan,season with mustard seeds,urud dal,dry red chilly and curry leaves.


Pour the seasoning over the rice and mix well.


Garnish with coriander leaves.


Now our Curd Rice is ready.Serve hot with veg fries or pickles.
