In this Post I share the recipe Mashed Brinjal(Egg Plant) in Microwave. First we want to roast the Brinjal well and peel the skin and mashed well and keep aside. Then we prepare the gravy by frying the Onion, Tomato,Ginger Garlic Paste. Next we add the spice powders and cook well. Now we add the Mashed Brinjal(Egg Plant),mix and cook well. Garnish with Coriander Leaves. This Dish can be the served with chapathi,roti,naan,etc.,

Ingredients:
Brinjal 1 No(500 gms).
Onion 1 No(Finely Chopped).
Tomato 1 No(Finely Chopped).
Green Chilly 2 Nos(Finely Chopped).
Ginger Garlic Paste 1 Tsp.
Red Chilly Powder 2 Tsp.
Coriander Powder 1 Tsp.
Garam Masala 1/2 Tsp.
Salt to Taste.
Sugar to Taste.
Lemon 1/2 Piece.
Oil 2 Tsp.
Butter 1 Tsp.
Coriander Leaves for Garnishing.
Step By Step Instructions:
- Chop all the Vegetables as mentioned above(except Brinjal(Egg Plant)).
- Prick the brinjal with a fork.
- Brush Oil on the brinjal.
- Microwave it for 10 minutes on high power. Turn once in between.
- Take the Brinjal from the microwave and cool it.
- Peel the skin of the brinjal. Reserve some skin for garnishing.
- Cut and mash the brinjal using knife.
- Take a microwave safe borosilicate glass bowl/ceramic bowl.
- Add Oil,butter and onion to it and mix well.
- Microwave it for 1 minute.
- Add Ginger Garlic Paste and Green Chilly to it and mix well.
- Microwave it for 1 minute.
- Add Tomatoes and mix well.
- Microwave it for 1 minute.
- Add Salt and Sugar and mix well.
- Microwave it for 2 minutes.
- Add Red Chilly Powder, Coriander Powder and Garam Masala to it and mix well.
- Microwave it for 2 minutes.
- Now add the Mashed Brinjal(Egg Plant) to it and mix well.
- Microwave it for 5 minutes.
- Now our Mashed Brinjal(Egg Plant) is ready.
- Garnish with Brinjal(Egg Plant) skin and Coriander Leaves. Serve with Chapathi,Roti,Paratha,etc.,

Chop all the Vegetables(Except Brinjal(Egg Plant)).
Prick the Brinjal(Egg Plant) with fork.
Brush with Oil.

Add Salt,Sugar and mix well.
Microwave it for 2 minute.
Add all Spice Powders and mix well.
Microwave it for 2 minute.
Now add the Mashed Brinjal(Egg Plant) and mix well.
Microwave it for 5 minute.
Now our Mashed Brinjal(Mashed Egg Plant) is ready.
Garnish with Brinjal Skin and Coriander Leaves. Serve with Chapathi,Paratha,roti,etc.,
