Kerala Special Vegetable Stew


Kerala Special Vegetable Stew is one of our traditional side dish curry,made by the combination of mixed vegetables and coconut milk which is usually served with breakfast dishes like poori,appam,idiyappam. Here I Share this recipe follwoed by My mother .

There are so many side dish curry/gravy varieties that are cooked all over the world to accompany with different food. In India,mostly the  curry/gravy varieties   are like chutneys, masalas, dal, sambhar, kulambu served with rice,idly,dosa,roti, chapathi, paratha, naan,etc., Here I shared the links of some of the curry varieties in this blog.

Vegtables contains vitamins,minerals and protein which helps in many ways to our eye sight,blood pressure level,skin care,immunity,etc., Using vegetables we can make so many dishes including sambhar,curry,rice,etc., Here I share some recipes link that I included in this blog.


Recipe Overview:

In this Post I share the recipe Kerala Special Vegetable Stew,for that first we fry the vegetables along with some seasonings and pressure cook it.Then we add the coconut milk and boil.Thats all our dish is ready.We can serve this dish for Appam,Idiyappam,Poori,etc.,


Method:

Ingredients:

Onion(Roughly Chopped) 1 No.
Tomato(Roughly Chopped) 1 No.
Carrot(Roughly Chopped) 1 No.
Beans(Roughly Chopped) 5 to 6 Nos.
Cauliflower(Roughly Chopped) 4 to 6 Nos.
Potato(Roughly Chopped) 1 No.
Green Peas 1/4 Cup.
Green Chilly(Chopped) 1 or 2 Nos.
Ginger Garlic Paste 1/2 Tsp.
Thick Coconut Milk 1 Cup.
Bay Leaf(Briyani Leaf/Tej Patta) 1 No.
Cardamom 1 No.
Cloves 3 Nos.
Cinnamon 1 piece.
Mustard Seeds 1 Tsp.
Urud Dal 1 Tsp.
Salt to Taste.
Water as Required.
Coconut Oil 1 Tbsp.
Curry Leaves Few.
Coriander Leaves for Garnishing.

Step By Step Instructions:
  • Heat coconut oil in a pan.Season with mustard seeds,urud dal,cardamom,cinnamon,cloves,bay leaf,curry leaves and green chilly.
  • Add onion to it and fry until the onion becomes soft(not brown) .
  • Add ginger garlic paste and fry.
  • Add the mixed vegetables except tomato and fry.
  • Add Salt and fry.
  • Add tomato to it.Add required water and pressure cook it for 2 whistles
  • After releasing pressure,turn on the stove.
  • Add coconut milk to it,mix and boil for 1 or 2 minutes.
  • Garnish with some coriander leaves.Now our Kerala Special Vegetable Stew is ready.
  • Serve with poori,appam,idiyappam,etc.,

Pictorial Description:

Chop all the Vegetables as mentioned.

Heat coconut oil in a pan and season with mustard seeds,urud dal,cardamom,cinnamon,cloves,bay leaf.
Add green chilly and curry leaves.
Add onion and fry until soft(not brown).

Add ginger garlic paste and fry.

Add all the mixed vegetable except tomato and fry.

Add required salt to it.
Add tomato to it.

Add required water to it.
Pressure cook it for 2 whistles.
After releasing pressure,turn on the stove.

Add 1 cup thick coconut milk to it.

Mix it well.

Boil it for 1 or 2 minutes.

Garnish with coriander leaves.

Now our Kerala Special Vegetable Stew is ready. Serve with idyappam,poori,appam,etc.,
