Grilled Broccoli in Makhani Gravy


Grilled Broccoli in Makhani Gravy is one the prefect sidedish curry/gravy in Indian Recipe which is suitable for roti,chapathi,naan,paratha.Here I shared the recipe that I have tried.

There are so many curry/gravy varieties that are cooked all over the world to accompany with different food. In India,mostly the  curry/gravy varieties   are like chutneys, masalas, dal, sambhar, kulambu served with rice,idly,dosa,roti, chapathi, paratha, naan,etc., Here I shared the links of some of the curry varieties in this blog.

Info about Key Ingredients:

Broccoli is the key ingredient of this recipe.Broccoli contains rich source of vitamin C which helps to boost our immunity power and also helps to heal the wounds faster.It has soluble fibres that prevents constipation in babies.We can give broccoli puree for babies.It also helps in brain development,contains calcium helps in bone and teeth development,it also helps for weight loss.

In this Post I share the recipe Grilled Broccoli in Makhani Gravy.First step is grill the marinated broccoli.Second process is to prepare makhani base.Finally we prepare the gravy using the above along with some ingredients.Lets see the ingredients required and the detailed step by step instructions for making this recipe.

Ingredients:

For Grilling Broccoli:

Broccoli 250 gms.
Curd 2 Tbsp.
Red Chilly Powder 1/2 Tsp.
Coriander Powder 1/2 Tsp.
Turmeric Powder 1/4 Tsp.
Amchur Powder 1/4 Tsp.
Cumin(Jeera) Powder 1/2 Tsp.
Garam Masala Powder 1/2 Tsp.
Ginger Garlic Paste 1 Tsp.
Oil 2 Tsp.
Black Salt 1/4 Tsp.
Salt to Taste.
Hot Water as Required.

For Makhani Base:

Onion(Sliced) 1 Nos.
Tomato(Roughly Chopped) 3 Nos.
Ginger(Chopped) 1 inch.
Garlic 5 Cloves.
Kashmir Red Chilly 5 to 7 Nos.
Cashewnuts 5 to 7 Nos.
Coriander Powder 1/2 Tsp.
Red Chilly Powder 1/2 Tsp.
Garam Masala Powder 1/2 Tsp.
Cumin Seeds(Jeera) 1 Tsp.
Butter 1 Tbsp.
Oil 2 Tsp.
Salt To Taste.
Water as Required.

For Gravy:

Grilled Broccoli as Required.
Makhani Base as Required.
Ginger juliennes 1 Tsp.
Garam Masala Powder 1/2 Tsp.
Dry Fenugreek Leaves(Kasthuri Methi) 1 Tsp.
Honey 1 Tsp.
Fresh Cream 2 Tbsp.
Butter 1 Tbsp.
Oil 2 Tsp.
Salt To Taste.
Coriander Leaves for Garnishing.

Step By Step Instructions:
  • For grilling broccoli,seperate the broccoli florets from the stem and blanch it in hot water for 2 mins.Drain the water and keep it aside.
  • Take a mixing bowl,add all the other ingredients given in the grilling section.
  • Now add the blanched broccoli,mix and marinate it for 15 minutes.
  • Heat a grill pan,add the florets to it and grill it on all sides.Keep it aside.
  • For Preparing makhani gravy,heat butter,oil in a pan.Add ginger,garlic to it and fry
  • Add onion to it fry until becomes soft.
  • Add tomato and fry it well.
  • Add kashmir red chilly,cashewnuts to it and fry.
  • Add all the spice powders given in the makhani base section to it and fry.
  • Add salt,little water and mix and cook it well until the tomato mashes well.
  • Turn off the stove,cool,grind it to a smooth paste.Now our makhani base is ready.Keep it aside.
  • Now we prepare our gravy for that heat butter,oil in a pan.
  • Add ginger juliennes to it and fry.
  • Add the prepared makhani base to it, and fry for 1 minute.
  • Add the grilled broccoli and mix it well.
  • Add required salt,dry fenugreek leaves,garam masala powder,honey and mix it well.
  • Add fresh cream to it and mix and boil for 2 minutes.
  • Garnish with coriander leaves.Now our Delicious Grilled Broccoli in Makhani Gravy is ready.Serve with roti,chapathi,naan,paratha,etc.,

Pictorial Description:

For grilling,Blanch the broccoli florets in hot water for 2 minutes.

Drain the water and keep it aside.

Take a mixing bowl,add oil,red chilly powder,coriander powder,turmeric powder,black salt,amchur powder,jeera powder,garam masala powder,ginger garlic paste,salt.

Add curd.

Add blanched broccoli.

Mix and marninate it for 15 minutes.

Heat a gril pan,add the marinated broccoli,grill it on all sides.Keep it aside.

For makhani base,heat butter,oil in a pan and fry ginger,garlic.


Add onion to it and fry.


Add tomato to it and fry it well.


Add kashmir red chilly,cashewnuts to it and fry for 1 minute.


Add coriander powder,red chilly powder,garam masala powder,salt to it and fry.


Add little water and cook well.


Turn off the stove and cool down completely.


Grind it to a smooth paste.Now our makhani base is ready.Keep it aside.


Heat butter,oil in a pan,add ginger juliennes and fry.


Add the makhani base to it and fry.


Add the grilled broccoli to it and mix well.


Add dry fenugreek leaves.


Add garam masala powder.


Add honey and mix it well.Add required salt.


Add fresh cream to it and mix well.


Garnish with coriander leaves.


Now our Grilled Broccoli in Makhani Gravy is ready.Serve with rice,roti,chapathi,naan,paratha,etc.,
