Eggless Wheat Muffins By Raji's Smart Kitchen "Cook Food in a Smart Way".


  Muffins are one of the favourite snacks arround the world especially kids.Here I share the recipe of Eggless Wheat Muffins that I have tried.

Recipe Overview:

In this Post I share the recipe Eggless Wheat Muffins.For making cake,we seperate the ingredient into wet and dry.First we beat the wet ingredients well in a mixing bowl.Then we add the dry ingredients gradually and mix it well to form a batter.Pour the batter in the muffin pan and bake.Now we get a yummy Eggless Wheat Muffins.Come on lets see the ingredients required and step by step instructons of this recipe.

Ingredients:

Wheat Atta 1 Cup.
Powdered Sugar 3/4 Cup.
Curd 1/2 Cup.
Oil 1/4 Cup.
Baking Powder 1 Tsp.
Baking Soda 1/2 Tsp.
Salt 1/4 Tsp.
Vanilla Essence 1 Tsp.
Water 1/4 Cup.

Step By Step Instructions:
  • Take a mixing bowl,add powdered sugar,curd,oil,water and beat it well using whisk or hand blender.
  • Now add wheat atta,baking soda,baking powder,salt to it mix it slowly to form a batter.
  • Add 1 tsp vannila essence to it and mix it well.
  • Line the muffin pan with muffin paper or if you use silicone moulds brush it with oil.
  • Pour the batter to the muffin mould using spoon(Here I'm using pipping bag).
  • Tap it well.
  • Preheat the oven for 10 minutes on 190 degree celcius.Place the tray on the oven and bake for 25 minutes.
  • Cool down completely
  • Now our Eggless Wheat Muffins are ready. Enjoyed it with tea/coffee.


Pictorial Description:

For making batter,Take a mixing bowl,add sugar,curd,oil and water.


Beat it well using whisk or hand blender.


Add wheat atta,baking powder,baking soda,salt and mix it well to form a batter.


Add 1 tsp vannila essense and mix well.


Now the cake batter is ready.


Line the muffin tray with muffin paper.


Fill it with batter.Tap it well.Bake for 25 minutes.


Cool it down completely.


Now our Eggless Wheat Muffins is ready.Enjoy with tea/coffee.

Soft and Fluffy Homemade Whole Wheat Bread(Kodumai Bread/Atta Bread) By Raji's Smart Kitchen "Cook Food in a Smart Way".

In this Post I share the recipe Whole Wheat Bread.It was one of my dream recipe that I want to bake bread at home.Baking bread is so easy.Here I explain how to bake the bread both in oven and pan.Come on lets see the ingredients required and step by step instructons of this recipe.

Ingredients:

Wheat Atta 3 Cup.
Sugar 2 Tbsp.
Dry Yeast 1/2 Tbsp.
Oil 3 Tsp.
Salt 2 Tsp.
Milk 1 Cup.
Water as Required.

Step By Step Instructions:
  • Take a cup of warm milk(not hot milk) in a cup,add 2 tbsp sugar,1/2 tsp dry yeast to it.Gently mix and leave it for 3 minutes to activate the yeast.
  • Take a wide mixing bowl,add 3 cups of whole wheat flour,2 tsp salt,3 tsp oil to it.Mix it gently.
  • Now add the activated yeast mixture to it and start kneading to form a soft dough.(Initially the dough is sticky continuous kneading change the dough into soft and nonsticky.We must knead it for 5 to 10 minutes for good result).
  • Apply oil to the dough,leave it for minimum 5 hours to ferment so that that dough rises to double in size.
  • Take the fermented dough in a work area,knead it to 2 to 3 minutes.Flat the dough.(refer pictorial description)
  • Fold it.(refer pictorial description)
  • Grease the loaf pan with oil.Place the dough in the loaf pan and leave it for minimum 1 hour to rise.
  • After rising,brush milk over the dough.
  • For oven baking,preheat the oven for 190 degree celcius,bake it for 35 to 45 minutes.For pan baking,place a wire rack in the pan,close and preheat the pan for 10 minutes.Place the loaf pan over the rack,close and bake it for 35 to 45 minutes in a low flame.
  • Our bread is baked well.Transfer the bread immedietely to the cooling rack and cool down it completely.
  • Slice the bread as you desired.
  • Now our Homemade Soft and Fluffy Whole Wheat Bread is ready to make delicious foods.


Pictorial Description:

Take a cup of warm milk,add sugar,dry yeast,mix and leave it for 3 minutes.


Now the bubbles are appeared and tha yeast is activated.


Take a wide bowl,add whole wheat flour,salt and oil.


Combine it well.


Add the yeast mixture to it.


Knead it for 5 to 10 minutes to form a soft dough.


Apply oil.


Cover and leave it for minimum 6 hours for ferment.


Now our dough rises well.


Knead and flat the dough for 2 to 3 minutes.


Fold it.


Grease the loaf pan with oil.


Place the dough in the loaf pan.


Allow it to rise for minimum 1 hour.


Brush milk over the dough.


Preheat the oven for 190 degree celcius and bake it for 35 to 45 minutes.(For pan baking refer step by step instructions)


Wow our bread is baked well.


Transfer to the cooling rack immediately.Cool it down completely.


Cut it into slices as you desired.Now our Homemade Soft and Fluffy Bread is ready to make delicious dishes.

Wheat Onion Samosa


Samosa is one of the famous and all time favourite fried snacks of India.During rainy days eating samosa with tea/coffee is a best one. This Samosa can be made with different variation. Here I Share the Samosa recipe made of wheat flour with Onion stuffing.

Onion is the key ingredient used in this recipe.In India,Onion plays a major role in making dishes. Onion contains nutrients that are used to control blood pressure. It also prevents cancer. In this Post I share the recipe Wheat Onion Samosa. Samosa is usually contains 2 parts,one is samosa sheet which is made up of any flour and the another one is stuffing,it may vary like potato stuffing,tapioca,minced meat,etc., Here I prepare the samosa sheet made of wheat flour and the stuffing made of onion.
First we knead a soft dough to prepare the samosa sheet.Then prepare the onion stuffing.Take one sheet,make a cone shape and paste the edges with maida paste. Then add the stuffing and seal it.Fry the samosas in hot oil both sides until it becomes crispy and golden brown color.Now our Wheat Onion Samosa is ready,enjoy with tea or coffee.

Ingredients:

For Samosa Sheet:

Wheat Flour 1 Cup.
Sugar 1/4 Tsp.
Salt to Taste.
Oil 1 Tbsp.
Water as Required.

For Stuffing:

Onion(Sliced) 2 Numbers.
Green Peas 1//4 Cup.
Grated Ginger 1 inch.
Green Chilly(Chopped) 1 Number.
Curry Leaves few.
Turmeric Powder 1/4 Cup.
Red Chilly Powder 1 Tsp.
Garam Masala 1/2 Tsp.
Dry Mango Powder(Amchur Powder) 1/4 Tsp.
Oil 1 Tbsp.
Salt to Taste.

Step By Step Instructions:
  • In a mixing bowl,add wheat flour,sugar,salt,oil.
  • Gradually add some water and knead it to form a soft dough. Keep it aside.
  • For stuffing,heat oil in a pan.
  • Add ginger,green chilly,curry leaves and fry.
  • Add onion and fry.
  • Add turmeric powder,red chilly powder,garam masala powder,dry mango powder(Amchur),salt and fry it well.
  • Add green peas and fry it well. Now our stuffing is ready.
  • Seperate the dough into small balls.
  • Roll the balls into a square shape thin roties.
  • Heat a dosa tawa,toast the roties for 10 sec each side.
  • Cut it into 2 halfs.
  • Now our samosa sheet is ready. We can store it upto 1 month in freezer.
  • In a small bowl, add 1 tbsp maida,little water and make a paste for sealing.
  • Take one sheet,apply maida paste on one side of the sheet(refer picture).
  • Make a cone shape and seal it(refer picture).
  • Add the stuffing inside the cone(refer picture).
  • Seal the cone with maida paste(refer picture).
  • Heat Oil for frying.
  • Put the sealed samosa into the hot oil,fry it until it becomes crispy and golden brown.
  • Now our Wheat Onion Samosa is ready. Serve it with Tea/Coffee.

In a mixing bowl,add wheat flour,salt,sugar,oil.


Gradually add water,knead it into a soft dough.


Chop the ingredients for stuffing.


Heat oil in a pan,add ginger,green chilly,curry leaves and fry.


Add onion and fry.


Add turmeric powder,red chilly powder,garam masala powder,dry mango(amchur) powder and salt and fry.


Add green peas and fry.


Now our stuffing is ready.


Seperate the dough into small balls.


Roll it out into thin square shaped like roti.


Heat the dosa tawa.


Toast the flattened rotis for 10 secs both sides.


Cut the sheets into half. Now our Samosa sheet is ready.


In a small bowl,add 1 tbsp maida and little water,mix it well to form a fine paste.This paste is used to seal.


Take one sheet,apply the paste on one side edge of the sheet.




Fold it into a cone shape and seal it.

Now add the stuffings into the cone.

Apply the maida paste on the edges.

Seal it well.

Repeat the step. Now our samosa is ready to fry.

Heat Oil for frying.

Put the samosa into the hot oil. Note the oil must be in medium heat.

Fry it well until it becomes crispy and golden brown.

Now our Wheat Onion Samosa is ready. Serve with Tea/Coffee.
