Pav Bhaji


Pav Bhaji is one of the most popular street food that is originated from Maharashtra,India. This Dish can be made up of Mixed Vegetables like Potato,Carrot,Green Peas,Cauliflower,etc., and served with Pavs(Salted Buns).

Here I Shared the recipe followed by myself.

Ingredients:

Onion    1 No(Finely Chopped).
Garlic    10 Cloves(Finely Chopped).
Capsicum    1 No(Finely Chopped).
Tomato    2 No(Finely Chopped or Pureed).
Boiled and Grated Potatoes    2 No.
Boiled and Grated Carrot    1 No.
Boiled and Grated Beetroot 1 No.
Boiled and Grated Cauliflower    4 to 5 Florets.
Boiled GreenPeas(Frozen Green Peas)   Few.
Turmeric Powder    1/4 Tsp.
Kashmir Red Chilly Powder    2 Tsp.
Coriander Powder    1/2 Tsp.
PavBhaji Masala Powder    2 1/2 Tbsp.
Cumin(Jeera)    1 Tsp.
Salt to Taste.
Sugar    1/4 Tsp.
Butter    3 Tbsp.
Oil    3 Tbsp.
Coriander Leaves for Garnishing.
Pav Bun(Salted Bun)    as Required.
Lemon Pieces as Required.

Method:
  • Chop the vegetables as mention above. Boil and grate the vegetables as mention above.
  • Heat oil in pan, season with Jeera(Cumin) and Garlic. Fry til the Garlic becomes brown.
  • Add the finely chopped Onion and fry until turns golden brown.
  • Add the finely chopped(Pureed) Tomato and fry for 1 minute.
  • Add Sugar and Salt and fry till Onion and Tomato forms a gravy state.
  • Add Turmeric Powder, Kashmir Red Chilly Powder,Coriander Powder to it and fry for a while.
  • Add finely chopped Capsicum and Green Peas to it and mix well.
  • Add all the boiled Vegetables in to it.
  • Mix it well.
  • Add some water and mash it using potato masher.
  • Now add the Pavbhaji Masala Powder and boil it.
  • Add 2 Tbsp of Butter to it and boil until the gravy becomes thick.
  • Finally add 1 Tbsp of Butter and Coriander Powder to it. Now our Bhaji is ready.
  • Heat a Dosa Tawa,add some Butter,Pavbhaji Masala and Coriander Leaves.
  • Place the Pav Buns(Salted Buns) on it and toast it well.
  • Now our Pav Bhaji is ready to serve with Onions,Lemon Pieces,Butter,Coriander Leaves.

Prawn Thokku


Thokku recipes are the most popular recipes of Tamilnadu.

Here I share the Prawn Thokku recipe followed by my mother.

Ingredients:

Prawn    1/2 Kg.
Onion    2 Nos(Finely Chopped).
Green Chilly    2 Nos(Finely Chopped).
Tomato    2 Nos(Finely Chopped).
Ginger Garlic Paste    3/4 Tsp.
Red Chilly Powder    1 Tsp.
Turmeric Powder    1/4 Tsp.
Coriander Powder    2 Tsp.
Fennel Seeds(Saunf)    1/2 Tsp.
Mustard Seeds    1 Tsp.
Oil    2 Tsp.
Curry Leaves    Few.
Salt to Taste.
Coriander Leaves for Garnishing.

Method:
  • Devain and Wash the Prawn.
  • Chop the required Vegetables.
  • Heat Oil in a pan(I'm using my mud pot.), season with Mustard Seeds,Fennel Seeds,Curry Leaves.
  • Add Onion and Green Chillies and fry until onion turns soft.
  • Add Ginger Garlic Paste to it fry until raw smell goes out.
  • Add Tomatoes and required Salt to it and fry until Tomatoes mash.
  • Add all the spice powder and fry until raw smell goes out.
  • Add required water and boil it.
  • Add the prawn to it and mix well for 2 to 4 minutes.
  • Garnish with Coriander Leaves.
  • Serve with Rice.

Grilled Curd Sandwich


Curd Sandwich is one of the simple breakfast recipe.

Here I Shared the recipe of mine.

Ingredients:

Bread Slices    2 Nos.
Curd    1/2 Cup.
Onion    1 No(Chopped).
Tomato    1 No(Chopped).
Capsicum    1 No(Chopped).
Pepper Powder as Required.
Butter     as Required.
Coriander Leaves    Handful. 

Method:
  • Take the ingredients and chopped well.
  • In a Bowl add all the Vegetables and Salt.
  • Add the Curd to it.
  • Mix it well.
  • Heat the Grill Pan.
  • Apply butter on both sides of the bread.
  • Add the Curd Mixture on it.
  • Sprinke some Pepper Powder on it.
  • Cover it with another bread.
  • Place the Sandwich on the hot grill pan and toast on both side.
  • Our Curd Sandwich is Ready to Serve.

Keti Paruppu(Simple Dal)


Keti Paruppu is one of the popular dish of Indian Cuisine. In India, Paruppu(Dal) can be prepared in several ways. Here I shared the simple version of Dal.

Ingredients:

Dal(Any one Dal Toor dal/Moong Dal(Paasi Paruppu)/Masoor Dal)    1 Cup.
Garlic Cloves    3 Nos.
Green Chilly    1 Nos.
Jeera    1 Tsp.
Turmeric Powder    1Tsp.
Asafoetida(Hing)    1/4 Tsp.
Water    as Required.

For Seasoning/Tempering:

Ghee    1 Tsp.
Mustard Seeds    1 Tsp.
Urud Dal    1 Tsp.
Red Chilly    2 Nos.
Curry Leaves    Few.

Method:
  • Take the Ingredients. Wash the Dal and drain the water.
  • In a pressure cooker, add Dal,Garlic,Green Chilly,Jeera,Turmeric Powder and Asafoetida.
  • Add the required Water and Salt and pressure cook it for 4 Whistle.
  • After the pressure down transfer the Dal to the serving bowl.
  • In a tadka pan, Heat the Ghee and season with Mustard Seeds,Urud Dal,Red Chilly and Curry Leaves.
  • Pour it in the Dal. Now our Simple Dal is ready. Serve with Rice.

Chicken Idiyappam(Rice Noodles)Pulav (Chicken Rice Noodles Pulav)


I have some leftover Idiyappam(Rice Noodles) and Fried Chicken. I continuously think what we do with this. I got an idea of making Pulav with this ingredient.

Here is the new recipe of mine Chicken Idiyappam(Rice Noodles) Pulav.

Ingredients:

Leftover Idiyappam/Rice Noodles(Scrambled)    2 Cups. For Recipe Click the Link.
Leftover Fried Chicken(Scrambled)    1 Cup. For Recipe Click the Link.
Onion    1 No(Sliced).
Tomato    1 No(Sliced).
Capsicum    1 No(Sliced).
Green Peas    Few.
Green Chilly    1 No.
Ginger Garlic Paste    1 Tsp.
Turmeric Powder    1/4 Tsp.
Red Chilly Powder    1 Tsp.
Garam Masala    1/2 Tsp.
Briyani Masala    1 Tsp.
Mustard Seeds(Rai)    1 Tsp.
Urud Dal    1 Tsp.
Curry Leaves    Few.
Salt to Taste.
Coriander Leaves    For Garnishing.

Method:
  • Scramble the leftover Idiyappam/Rice Noodles and Fried Chicken.
  • Chop the Vegetables used.
  • Heat oil in the kadai and season with Mustard Seeds,Urud Dal and Curry Leaves.
  • Add Onion and Green Chillies to it and fry till the onion turns golden brown color.
  • Add Ginger Garlic Paste and fry until raw smell goes out.
  • Add Tomato to it and fry.
  • Then add Capsicum and Green Peas to it and fry until it becomes soft.
  • Add the required salt to it. Note that Idiyappam and Chicken already has salt.
  • Add the Spice Powders to it.
  • Fry until the raw smell goes out.
  • Add the Fried Chicken pieces and mix well.
  • Add the Idiyappam/Rice Noodles to it and mix well.
  • Garnish with Coriander Leaves.
  • Serve hot.
