Bitterguard Tamarind Curry(Pavakkai Puli Kozhambu/Karela Imli Curry) in Pressure Cooker By Raji's Smart Kitchen "Cook Food in a Smart Way".


Bitterguard(Pavakkai/Karela) Tamarind Curry is one the traditional curry of Tamilnadu,India which is made of bitterguard,tamarind and spice powders. This can be served with rice,idly,dosa,etc.,Here I shared this recipe that I have tried using pressure cooker.

Recipe Overview:

In this blog I share the recipe of Bitterguard Tamarind Curry(Pavakkai Puli Kozhambu/Karela Imli Curry).It is one of the simple recipe which becomes the best combination for curd rice.First we extract tamarind juice,then we chop and soak the bitter guards by mixing salt for 1/2 an hour so that the bitterness of the bitterguard can be reduced,then we make the curry with this preparation.Come on lets check the ingredients and step by step procedure for this recipe.

Ingredients:

Bitterguard(Pavakkai/Karela)(Finely Chopped) 250 gms.
Shallots(Sambhar Onion)(Roughly Chopped) 10 to 15 Nos.
Garlic Cloves 5 to 10 Nos.
Turmeric Powder 1/4 Tsp.
Tamarind Lemon Size.
Sambhar Powder 1 Tbsp.
Urud Dal 1 Tsp.
Dry Red Chilly 2 to 3 Nos..
Asafoetida Powder 1/4 Tsp.
Mustard Seeds 1 Tsp.
Fenugreek Seeds(Vendhayam/Methi) 1/4 Tsp.
Salt To Taste
Water as Required.
Sesame Oil(Till Oil/Gingelly Oil) 1 Tbsp.
Curry Leaves Few.

Step By Step Instructions:
  • Soak tamarind in 1 cup of water for extracting tamarind water.
  • Fine Chop the bitterguard,transfer to a bowl,add salt,mix and leave it for 1/2 an hour to absorbs the bitterness.
  • Heat sesame oil in a pressure cooker,season with mustard seeds,urud dal,fenugreek seeds,dry red chilly,asafoetida powder and curry leaves.
  • Add garlic cloves.
  • Add shallots and fry until it becomes soft.
  • Add bitterguard and fry it for 1 minute.
  • Add turmeric powder and fry for 1 minute.
  • Add the tamarind juice,mix and boil it until raw smell goes out.
  • Cover the pressure cooker and pressure cook it for 3 to 4 whistles.
  • Open the pressure cooker after the pressure is released.Turn on the stove,add sambhar powder,mix and cook it for 2 to 3 minutes.
  • Turn off the stove.Add few curry leaves.
  • Our Bitterguard Tamarind Curry(Pavakkai Puli Kozhambu/Karela Imli Curry) is ready.Serve with rice,idly,dosa....

Pictorial Description:

Soak tamarind in 1 cup of water.

Roughly chop the shallots.

Fine chop the bitterguard,transfer to a bowl,add salt,mix and leave it for 1/2 an hour.

Heat sesame oil in a pressure cooker,season with mustard seeds,urud dal,frnugreek seeds,dry red chilly,asafoetida powder and curry leaves..

Add garlic cloves.

Add shallots and fry until soft.

Add bitterguard and fry for 1 minute.

Add turmeric powder and fry for 1 minute.


Add tamarind juice.


Boil it until raw smell goes out.


Pressure cook it for 3 to 4 whistles.


Now the bitterguard cooked well.Turn on the stove.


Add 1 tbsp sambhar powder.


Mix it well,add required salt and cook it for 2 to 3 minutes.


Done.Turn off the stove.Add few curry leaves.


Our Bitterguard Tamarind Curry(Pavakkai Puli Kozhambu/Karela Imli Curry) is ready.Serve with rice,idly,dosa.

Simple Dry Side Dish Vietamese Bitter Melon Egg Stir Fry Recipe By Raji's Smart Kitchen "Cook Food in a Smart Way".


 From the title there is a question arrives to you what is bitter melon,am I correct? Bitter melon is nothing but the other name of bitter guard.In India,we call bitter guard in many names as pavakkai(tamil),pavakka(malayalam),karela(hindi),kakarakaya(telugu) as so on.Most of the people hated bitter guard due to its bitterness.But bitter guard has more health benefits especially it controls sugar and cholesterol level in blood and also it is a good blood purifier.Then how we take bitter guard in our diet.Vietamese follow the idea of consuming bitter guard by mixing with other ingredients.Here I share the recipe of how to cook simple dry side dish Vietamese Bitter Melon Egg Stir Fry(here bitter guard is mixed with egg) that I have tried and also I add the tips for reducing the bitterness of the bitterguard.

From childhood itself my mother introduce bitterguard to me and my siblings in variety of yummy traditional dishes like Bitterguard Pitlai,Bitterguard Tamarind Curry,Bitterguard Aviyal,Bitterguard Poriyal in our diet.So it beomes one of the favourite vegetable for us.We can also make bitterguard fritters and bitterguard chips which are awesome in taste.
There are so many ways to reduce the bitterness,here I share what I followed.
  • While buying bitter guard,choose the one with less stripes.
  • Scoop out the seeds inside the bitter guard with a spoon
  • Chop the bitter guard,add it in a bowl,add salt and curd,rest it for half an hour.So the bitterness is reduced.After that wash it throughly and cook.
  • You can also deep/swallow fry the bitterguards then used it in making dishes.
For this recipe,I follow another way to reduce the bitterness that works great and it is First I deseed the bitterguard,chop and blanched in a hot water for 10 to 15 minutes by adding a pinch of salt.So the bitterness is reduced and also the bitterguard is half cooked and becomes easy to cook this recipe in less time. Ok, Come on lets see the required ingredients and the step by step instruction for this recipe.

Preparation Time:10 to 15 Minutes Cooking Time:5 Minutes Serving:2

Ingredients:

Half Sliced Bitter Melon(Bitter Guard/Pavakkai/Karela) 250 gms.
Egg 4 Nos.
Finely Chopped Green Chilly 1 No.
Black Pepper Powder 1/4 Tsp.
Soy Sauce 2 Tsp.
Salt to Taste.
Olive Oil 2 Tsp.


Step By Step Instructions:
  • First we want to reduce the bitter taste for that we deseed the bitterguard and half slice it.
  • Add it in a hot water along with salt and blanch it for 10 to 15 minutes.
  • Heat olive oil(you can use any cooking oil) in a pan,add the chopped green chilly and fry for 30 seconds.
  • Add bitter guard along with a pinch of salt.Fry it well for 1 or 2 minutes.
  • Meanwhile,take a bowl,add four eggs along with salt and pepper.Beat it well and keep it aside.
  • Now the bitter guard is cooked well,add soy sauce and fry it for 1 minute.
  • Add the egg mixture to it and leave for 30 seconds.
  • Scramble it well.
  • Now our Tasty Vietamese Bitter Melon Egg Stir Fry is ready.Serve with rice,chapathi,bread,etc.,

Deseed and half slice the bitter guard,blanch it in hot water along with a pinch of salt for 10 to 15 minutes.

Heat olive oil in a pan,add green chilly and fry for 30 seconds.


Add bitter guard along with a pinch of salt.


Fry it well for 1 or 2 minutes.


Add soy sauce and fry for 1 minute.


Take a bowl,drop eggs along with salt and pepper.


Beat it well.


Add it.


Scramble it well.


Now our Tasty Vietamese Bitter Melon Egg Stir Fry is Ready.


Note:

While scrambling,the egg is neither to runny nor to hard.It must be in between state.
Add less salt because the bitter guard is blanched in salt water,the egg also mixed with salt and pepper and also the soy sauce contains salt.

Serving Suggestions:

This Tasty Vietamese Bitter Melon Egg Stir Fry can be served with rice especially with mixed or variety rice,chapathi,stuffed with bread.

Kerala Bitterguard(Pavakkai/Karela) Pitlai By Raji's Smart Kitchen "Cook Food in a Smart Way"

In this blog I share the recipe of Kerala Bitterguard(Pavakkai/Karela) Pitlai.For that we pre prepare the things needed for this recipe.First we extract tamarind juice,then we cook the toor dal,then we deep fry the bitter guards,then we prepare masala powder,then we make the curry with this preparation.Come on lets check the ingredients and step by step procedure for this recipe.

Ingredients:

Bitterguard(Pavakkai/Karela)(Sliced) 250 gms.
Toor Dal 1/4 Cup.
Onion(Roughly Chopped) 1 No.
Green Chilly 2 to 3 Nos.
Tamarind Lemon Size.
Thick Coconut Milk 1 Cup.
Salt To Taste
Water as Required.
Coconut Oil 3 Tsp.
Curry Leaves Few.

For Masala Powder:

Dry Red Chilly 5 to 7 Nos..
Coriander Seeds 1 Tbsp.
Toor Dal 1 Tbsp.
Urud Dal 1 Tsp.
Pepper 1 Tsp.
Cumin/Jeera 1 Tsp.
Turmeric Powder 1/4 Tsp.
Asafoetida Powder 1/4 Tsp.
Coconut Oil 1 Tsp.

For Seasoning:

Mustard Seeds 1 Tsp.
Curry Leaves Few.
Coconut Oil 2 Tsp.

Step By Step Instructions:
  • Soak tamarind in 1 cup of water for extracting tamarind water.
  • Take 1/4 cup of toor dal in a pressure cooker,add required water and cook for 1 whistle.
  • Round slice the bitterguard,transfer to a bowl,add salt,mix and leave it for 1/2 an hour to absorbs the bitterness.
  • Then deep fry the bitterguard and keep it aside.
  • For masala powder,heat 1 tsp coconut oil in a pan,add all the masala powder ingredients in to it.Roast it well until aroma comes out.
  • Transfer it into mixie jar,blend it into a coarse powder.Keep it aside.
  • For curry,heat coconut oil in a pan,add onion and green chilly and fry it for 1 minute.
  • Add the fried bitterguards and fry for 1 minute.
  • Add the cooked toor dal and mix it well.
  • Add 1 cup of water,required salt,cover and cook well.
  • Now add the masala powder,mix and fry it for 2 minutes.
  • Add a cup of tamarind water,mix,cover and cook it for 5 minutes.
  • Add 1 cup of thick coconut milk,mix and boil it for 2 to 3 minutes in low flame.Turn off the stove.
  • For seasoning,heat coconut oil in a tadka pan,season with mustard seeds and curry leaves.
  • Pour the seasoning over the curry.
  • Our Traditonal Kerala Bitterguard(Pavakkai/Karela) Pitlai is ready.Serve with rice,idly,dosa....

Pressure cook 1/4 cup of toor dal for 1 whistle.

Round slice the bitterguard,transfer to a bowl,add salt,mix and leave it for 1/2 an hour.

Deep fry the bitterguards and keep it aside.

For masala powder,heat 1 tsp coconut oil in a fry pan,add all the masala ingredients.

Roast it well until aroma comes out.

Transfer to a mixie jar.

Grind it into a coarse powder.


Chop onion and green chilly.


Heat coconut oil in a pan,add onion and green chilly,fry it well.


Add the fried bitterguard and fry for 1 minute.


Add the cooked dal,mix it well.


Add 1 cup of water.


Add required salt,cover and cook well.


Add the masala powder and mix well.


Add 1 cup of tamarind water and mix it well.


Cover and cook it well for 5 minutes.


Add 1 cup thick coconut milk.


Mix and boil it for 2 minutes(the flame must be low).Turn off the stove.


For seasoning,heat coconut oil in a tadka pan,season with mustard seeds and curry leaves.


Pour the seasoning over the curry.


Our Traditonal Kerala Bitterguard(Pavakkai/Karela) Pitlai is ready.Serve with rice,idly,dosa...
