Mango,the word we hear itself mouthwatering.We wait for each summer to eat mangoes.Mangoes can be consumed either raw as well as fruit.The raw mango taste sour due to its sour taste we can make pickles.In tamil we have a proverb "Madha Oothadha Sorai Mangai Oothividum" it means those who feeling bored of eating regular food also can enjoying the food if mango pickle is in plate.That's the power of Mango.Here I share the recipe of how to make Vendhaya Mangai(Instant Raw Mango Pickle) that was teached by My Mother.

Vendhaya Mangai(Instant Raw Mango Pickle) is one of the traditional dish of our place can made with mango,red chilly,fenugreek seeds(vendhyam) and it is the favourite dish of mine which taste mouthwatering.My mother prepare this pickle during mango season(summer) and we enjoyed it well.Using mangoes we can also make curry,aviyal,uppitu,pulichery(mango fruit) which taste awesome.Here I take totapuri mango which is commonly called as uttu manga,kili mooku(parrot's beak,named based on the shape of this mango) because of its less sour taste and it is good one for making this recipe.I also used chilly flakes and fenugreek seed for its original taste.You can also use red chilly powder and fenugreek powder to this recipe.Come on lets see the required ingredients and the step by step instruction for this recipe.

Ingredients:
Raw Mango(Fine Sliced) 1 Piece.
Dry Red Chilly 6 to 7 Nos.
Salt to Taste.
For Seasoning/Tempering:
Turmeric Powder 1/4 Tsp.
Asafoetida Powder 1/4 Tsp.
Fenugreek Seeds(Vendhayam/Methi) 1/2 Tsp.
Mustard Seeds 1 Tsp.
Sesame Oil(Gingelly Oil/Til Oil/Nallennai) 1 Tbsp.
Curry Leaves(Finely Chopped) Few.
Step By Step Instructions:
- Take 6 to 7 dry red chilly in a mixie jar.Grind it in pulse mode to make chilly flakes.
- We wash the mango throughly and fine slice it.The Slice must be in medium size.Take it in a mixing bowl.
- Now add the prepared red chilly flakes and required salt to it..
- For seasoning,heat sesame oil in a tadka pan,season with mustard seeds,fenugreek seeds,asafoetida powder,turmeric powder and curry leaves.
- Pour the seasoning over the mango.Give a good mix.
- Now it is done.
- Transfer it in a glass bottle.
- Now Our Vendhaya Mangai(Instant Raw Mango Pickle) is ready to serve with rice,chapathi,etc.,

Slice the mango and take it in a mixing bowl.

Transfer it to a glass bottle.

Note:
Use sesame oil for making pickles because sesame oil naturally act as a preservative and gives the pickle long life.
You can transfer the pickle in a glass bottle,the bottle must be clean and dry so that the fungus can't arrives.
You can instantly served this pickle or you can rest it for 4 to 5 hours so that the spices enters well into the mangoes and it gives more taste.
We can store this pickle in refrigrator and consume it within a week.

Serving Suggestions:
This Vendhaya Mangai(Instant Raw Mango Pickle) can be served with rice especially Curd Rice which beomes the great combination.
