Vegetable Masala Curry is one of the best sidedish combination for Idly,
Dosa, Appam, Idiyappam, Chapathi,etc., Here I shared this recipe followed by
my Mother.

Ingredients:
Onion 2 Nos(Roughly Chopped).
Carrot 1 No(Roughly Chopped).
Potato 1 No(Roughly Chopped).
Green Chilly 2 No.
Ginger Garlic Paste 1 Tsp.
Grated Coconut 1 Cup.
Coriander Powder 1 Tsp.
Red Chilly Powder 1 Tsp.
Garam Masala 1/2 Tsp.
Mustard Seed(Rai) 1 Tsp.
Urud Dal 1 Tsp.
Water as Required.
Salt to Taste.
Coconut Oil as Required.
Curry Leaves Few.
Coriander Leaves for Garnishing.
Method:

Step By Step Pictorial Instructions:
Heat a Pan.
Add the grated coconut into it.
Roast it well until the golden brown color occurs.Turn off the
Stove.
Add Coriander Powder and Red Chilly Powder.
Fry well and set aside.
Transfer to the mixie jar .
Grind it to a fine paste.
Chop the Vegetables as mentioned above.
Heat Oil in the same pan and season with Mustard, Urud dal and Curry
Leaves.
Add Green Chillies to it.
Add Onion to it and fry for 1 minute.
Add Carrot and Potato into it and fry well.
Add Ginger Garlic Paste and fry until the raw smell goes out.
Add Garam Masala Powder.
Add Salt and fry well.
Add Water to it and boil until the Vegetables cooked well.
Once Vegetables cooked down, then add the Masala Paste to it.
Mix it well and boil for 2 minutes.
Garnish with Coriander Leaves.
Our Masala Curry is ready. Serve as sidedish for Idly, Dosa, Appam,
Idiyappam, Chapathi, Parotha,etc.,
Sambhar is one of the traditional as well as popular dish made of Dal and
Vegetables in South India.This recipe is perfect for
Rice,Idly,Dosa,Appam,Idyappam. Here I shared the recipe that are followed
by my family.

Ingredients:
Toor Dal or Sambhar Dal or Arhar Dal 1 Cup.
Onion 1 Nos or Small Onion(Shallot or Chinna Ulli or
Sambhar Onion) Few.
Tomato 1 Nos.
LadyFinger 5 Nos.
Brinjal 2 Nos.
Drumstick 1 Nos.
Carrot 1 Nos.
Potato 1 Nos.
You can also put some other vegetables like
Pumpkin,Cucumber,Bottle Guard,Ash
Guard,Beans,Cabbage.
Tamarind Paste 2 Tbsp or Soak Gooseberry Size
Tamarind in water and use it.
Turmeric Powder 1/4 Tsp.
Red Chilly Powder 1/4 Tsp.
Coriander Powder 1/4 Tsp.
Sambhar Powder 1 1/2 Tbsp.
Oil 1 Tbsp.
Water as required.
Salt as Taste.
Sugar 1 Pinch.
Coriander Leaves Handful.
For Seasoning or Tempering:
Coconut Oil 2 Tsp.
Mustard Seed or Rai 1 Tsp.
Cumin or Jeera 1Tsp.
Asafoetida or Hing 1/4 Tsp.
Curry Leaves.
Method:

Step By Step Pictorial Instructions:
Take one cup of Toor Dal or Sambhar Dal or Arhar Dal.
Pressure cook the Dal for 4 whistles.
Roughly chop the vegetables.
Heat Oil in a pan(I am using mud pot).
Add Onion and fry.
Add Tomato and fry for 1 minute.
Now add Turmeric Powder,Red Chilly Powder,Coriander Powder and
fry for a while.
Add the Vegetables and Salt.
Fry the Vegetables for 1 minute.
Add the Tamarind Paste or Tamarind Water.
Add Some water. If you add Tamarind Water skip this step.Then
Boil Vegetables half cooked.
Now add the boiled Dal to it and boil for 5 minutes or vegetables
fully cooked.
Add the Sambhar Powder to it.
Boil it until raw smell goes out and check the salt,tamarind.
Add some Coriander Leaves and sugar and boil for 2 minutes.
Now the Sambhar is done and Garnish with some more Coriander
Leaves.
In a Tadka Pan, Add Coconut
oil,Mustard(Rai),Cumin(Jeera),Asafoetida(Hing) and Curry Leaves
and season it.
Add the seasoning to the Sambhar.
Now the tasty Sambhar is ready. Serve with
Idly,Dosa,Rice,Appam,Idyappam.
