Pumpkin is the key ingredient of this recipe.Pumpkin contains rich source of vitamin C and E which helps to boost our immunity power and also helps to heal the wounds faster.It also helps to increase the vision.If we take small amount of pumpkin,it gives more filling.so it helps in weight loss.

In this Post I share the recipe Spicy Pumpkin Gravy recipe.For that we prepare a masala paste.Then we cook the pumpkin along with veggies.Add the boiled groundnuts.Now add the paste and cook well.Now our Spicy Pumpkin Gravy is ready. Lets see the ingredients required and the detailed step by step instructions for making this recipe.

Ingredients:
Pumpkin(Roughly Chopped)200 gms..
Groundnut 1/2 cup.
Onion(Finely Chopped) 1 Number.
Tomato(Finely Chopped) 1 Number.
Green Chilly 1 or 2 Nos.
Turmeric Powder 1/4 Tsp.
Asafoetida(Hing) 1/4 Tsp.
Mustard Seeds 1 Tsp.
Oil 2 Tbsp.
Salt to Taste.
Water as Required.
Coriander Leaves for Garnishing.
For Masala Paste:
Dry Red Chilly 3 Nos.
Fenugreek(Methi) 1/4 Tsp.
Cumin Seeds(Jeera) 1 Tsp
Black Pepper 1/2 Tsp
Coriander Seeds 2 Tsp.
Grated Coconut 1/2 Cup.
Step By Step Instructions:
- Soak the groundnut for 1/2 hours.Pressure cook it for 7 to 10 whistle and keep it aside.
- Chop the veggies as mentioned.
- For preparing masala paste,heat a pan,add all the masala paste ingredients except coconut.Dry roast it until aroma comes out.Cool it down completely.
- Transfer to a mixie jar,add coconut and grind it to a fine paste. Keep it aside.
- Heat oil in a pan,season with mustard seeds and curry leaves.
- Add onion and green chilly to it fry until becomes soft.
- Add turmeric powder,asafoetida(hing),salt and fry it well.
- Add tomato to it and fry.
- Add little water,cover and cook it for 1 minute.
- Add pumpkin and mix and fry it well.
- Cover and cook it well(add required water).
- Once cooked well,add the boiled groundnuts and cook.
- Add masala paste to it and mix and boil for 2 minutes.
- Garnish with Coriander Leaves.
- Now our Spicy Pumpkin Gravy is ready. Serve with Rice,Roti,Chapathi,dosa,etc.,

Now our Spicy Pumpkin Gravy is ready.Serve with rice,roti,chapathi,dosa,etc.,
