Tea Kadai Special Ulli Vadai(Tea Stall Special Onion Vada):Perfect Rainy Day Snacks By Raji's Smart Kitchen "Cook Food in a Smart Way".


Ulli means onion in Malayalam.Ulli Vadai is one of the popular as well as favourite snacks in our place.Usually we make ulli vadai in our home but the tea kadai(tea stall) style ulli vadai is different and it gives more taste.Every time we go to our home town we won't miss it.Nowadays we can't go to our home town due to pandemic so we miss a lot of our traditional foods.So I try to cook these foods in my home itself.Likewise I tried this Ulli Vadai in my home and the taste I get is absolutely same as the tea stall style.Here I share the recipe of how to make Tea Kadai Special Ulli Vadai(Tea Stall Special Onion Vada) that I have tried in my home.

For making this vada,we want to make ball shapes with onions for that we want to mix the onion well by adding little salt for atleast 5 minutes so that the onion becomes soft and juicy as well as it is easy to make balls or shapes.On my first attempt,I used gram flour(kadalai maavu/besan) instead of maida and the texture is same but the taste little different.You can also use gram flour instead of maida.Come on lets see the required ingredients and the step by step instruction for this recipe.

Preparation Time: 20 Minutes Cooking Time: 10 Minutes Serving: 2

Ingredients:

Sliced Onion(Ulli/Vengayam) 5 Nos.
Green Chilly(Finely Chopped) 1 or 2 Nos.
Grated Ginger 1 Inch.
Curry Leaves(Chopped) Few.
Fennel Seeds(Perunjeeragam/Sombhu/Saunf) 1 Tsp.
Kashmir Red Chilly Powder 1 Tsp.
Maida(All Purpose Flour) 3 Tbsp.
Salt to Taste.
Oil For Frying.


Step By Step Instructions:
  • Slice the onion and take it in a mixing bowl.Add little salt and mix it well for 5 minutes so that the juice of the onion are released and it becomes soft.
  • Add green chilly,ginger,curry leaves,fennel seeds,red chilly powder and required salt to it.Combine and rest it for 10 minutes.
  • Add maida and mix it well(without adding water) until we can make shapes.Make small balls.
  • Heat oil for frying.Add the balls one by one to it and fry both sides till golden brown color occurs(The flame must be in low).
  • Our Rainy Day Snacks Tea Kadai Special Ulli Vadai(Tea Shop Special Onion Vada) is ready.Enjoy with tea or coffee.

Note:

While mixing,the juice of the onion comes out so we don't add any water.
Here I need 3 tbsp of maida,you can add as required upto 1/2 cup.
While frying,the flame must be low,if it is high,the outer side becomes black and not cooked inside.
