Mixed Veg Aviyal(Malabar Mixed Veg Aviyal)


 

Mix Veg Aviyal(Malabar Mix Veg Aviyal) is one of the popular sidedish made by the combination of mixed vegetables and coconut paste. Here I shared the recipe followed my mother. This Mixed Veg Aviyal is one of the most important sidedish in the Grand Lunch served in our Marriage Ceremony and Kerala Royal Sadhya.

Recipe Overview:

In this Post I share the recipe Mixed Veg Aviyal(Malabar Mixed Veg Aviyal). First we chop all the vegetables in lengthwise. Then we prepare a coarse paste of coconut,green chilly,cumin(jeera),shallot(sambhar onion) and small piece of tamarind. Heat a pan,add little water,boil all vegetables,add turmeric powder and salt. Add the coconut paste,coconut oil,curry leaves and mix it well,cover and boil until done. Add curd and mix well. Now our Mixed Veg Aviyal is ready.Garnish with some more curry leaves,coconut oil and serve.

Ingredients:

Brinjal(Cut lengthwise) 2 Numbers.
Plantain(Raw Banana,Cut lengthwise) 2 Numbers.
Drumstick(Cut it into half and pieces) 1 Number.
Mangalore Cucumber(peel and cut lengthwise) 1 small piece.
Snakeguard(Cut lengthwise) 1 small piece.
Ashguard(Peel and cut lengthwise) 1 small piece.
Elephant Yam(Peel and cut lengthwise) 1 small piece.
Carrot(Cut lengthwise) 1 small piece.
Beans(Cut lengthwise) 2 Numbers.
Cluster Beans(Cut lengthwise) 3 Number.
Raw Mango(Big pieces) 1 small size Mango(Not Compulsory).
Turmeric Powder 1/4 Tsp.
Salt to Taste.
Curd 2 tsp(If you add Raw Mango then skip it).
Water 1 small cup.
Curry leaves few.
Coconut Oil 1 Tbsp(Compulsory).

For Paste:

Grated/Cubed Coconut 1 Cup.
Green Chilly 10 to 12 Numbers
Shallots(Sambhar Onion) 2 Numbers.
Cumin Seeds(Jeera) 1 Spoon.
Tamarind 1 Small Piece.

Step By Step Instructions:
  • Cut the vegetables as mentioned above.
  • Grind the paste ingredients into coarse paste.
  • In a pan,add some water and half boil the elephant yam seperately,drain the water and keep it aside.
  • Heat a pan, add 1/2 cup of water.
  • Add the vegetables to it.
  • Add turmeric powder and salt to it.
  • Mix and cover it. Boil the vegetables well.
  • Add the coconut paste,1/2 tbsp coconut oil and curry leaves. Mix it well.
  • Add curd and mix it well.
  • Now our Mixed Veg Aviyal is ready.
  • Add some more curry leaves and 1/2 tbsp coconut oil and serve.

Take all the vegetables as mentioned above.


Chop the vegetables as mentioned above.


In a mixie jar,add the paste ingredients.


Grind it into a coarse paste.


Heat a pan,add elephant yam and water. Boil it until half cooked. Drain the water and keep aside.


Heat 1/2 cup water in a pan.


Add all the vegetables to it.


Add turmeric powder.


Add salt.


Mix it well.


Cover and boil until the vegetables cooked completely.


Add the coconut paste.


Add curry leaves.


Add coconut oil(1/2 tbsp).


Mix it well.


Cover and cook for 2 minutes.


Add 2 Tsp curd(Skip this step if you add raw mango). Mix it well.


Add remaining 1/2 tbsp coconut oil and curry leaves.


Now our Mixed Veg Aviyal(Malabar Mixed Veg Aviyal) is ready to serve.
