Brinjal Poriyal or Brinjal Fry


Brinjal Poriyal or Brinjal Fry is one of the simple recipe in Indian Cuisine that are perfect sidedish for Rice.

Ingredients:

Brinjal 250gms(Sliced).
Turmeric Powder 1/4 Tsp.
Red Chilly Powder 1 Tsp.
Salt to Taste.
Urud Dal 1 Tsp.
Mustard(Rai) 1 Tsp.
Curry Leaves Few.
Oil 1 Tbsp.

Method:

  • Chop the Brinjal as mentioned above and put it in water to avoid change of color.
  • Heat Oil in a Pan and season with Mustard,Urud Dal and Curry Leaves.
  • Add the Brinjals in to it and fry for 30 sec.
  • Add Salt to it and fry until the brinjal is done.
  • Add Turmeric Powder and Red Chilly Powder and fry for 1 minute.
  • Brinjal Poriyal or Brinjal Fry is ready.
  • Serve as sideidsh to Rice.

Simple Beetroot Thovaran By Raji's Smart Kitchen "Cook Food in a Smart Way"


Thovaran Recipes are commonly cooked sidedish for Rice in South India. Here I Shared the Thovaran made of Beetroot.

Ingredients:

Beetroot 250gms(Finely Chopped).
Grated Coconut 1/4 Cup.
Garlic Cloves 1 No.
Red Chilly Powder 1 Tsp.
Cumin Seeds(Jeera) 1 Tsp.
Mustard Seeds(Rai) 1 Tsp.
Urud Dal 1 Tsp.
Coconut Oil 2 Tsp.
Water as Required.
Salt to Taste.
Curry Leaves as Required.

Method:
  • Chop the Vegetables as mentioned above.
  • Heat Oil in a pan and season with Mustard,Urud Dal and Curry Leaves.
  • Add the finely chopped Beetroot and fry.
  • Add Salt and fry for 2 minutes.

  • Add some Water and boil it.

  • Take the Coconut,Cumin(Jeera),Garlic,Red Chilly Powder in a Mixie Jar.
  • Grind it to a coarse mixture in pulse mode as shown below.
  • Now the Beetroot is completely boiled.
  • Add the coarse mixture into it.
  • Mix it well. Now our Beetroot Thovaran is ready.
  • Serve as sidedish for Rice.

Paruppu Vada(Dal Vada).


Dal Vada is one of our traditional snacks recipes. Here I share how to make Dal Vada and also bonus recipe Rasam Vada(Dal Vada Soaked in Rasam).

Ingredients:

Channa Dal/Vada Dal  1 Cup.
Onion 1 No(Finely Chopped).
Green Chilly 2 Nos(Finely Chopped).
Curry Leaves Few(Finely Chopped).
Fennel Seeds(Perunjeeragam/Saunf/Sombhu) 1Tsp.
Red Chilly Powder 1 Tsp.
Asafoetida(Perumkayam/Hing) 1/4 Tsp.
Salt to Taste.
Oil for Frying.

Similar Recipes:


Method:

  • Take 1 Cup of Channa Dal and soak it for 2 hours.
  • Transfer it into mixie jar.
  • Blend it into a coarse paste without adding water as shown below.
  • Transfer it into a bowl.
  • Add Chopped Onion,Green Chilly,Curry Leaves.
  • Add Fennel Seeds,Red Chilly Powder,Asafoetida and Salt.
  • Mix it Well.
  • Make balls and flat it down as shown below.
  • Heat the Oil for Frying.
  • Put the Vada into it.
  • Fry it until golden brown on both sides.
  • Enjoy the Dal Vada with Tea or Coffee.

Bonus Recipe: Rasam Vada 

  • Put the Dal Vada into it and boil it for 5 minutes and turn off the stove.
  • Add some Coriander Leaves and Cover with lid and leave it for 10 minutes.
 
  • Enjoy the Rasam Vada.

Sweet Aval/Poha FireLess Cooking


Sweet Aval is one of the traditional and healthy breakfast or snacks recipe of South India.Here I Shared the recipe followed by me.

Ingredients:

Aval/Poha 2 Cup.
Grated Jaggery(Sharkara/Vellam/Gur/Gul)  1 Cup.
Grated Coconut 1/2 Cup.
Sliced Banana as Required.
Cardamom Powder a Pinch.
Sugar 1/4Tsp.
Honey 1 Tsp.

Method:

  • Wash and Strain the Aval or Poha.


  • Take it in a bowl.

  • Add Jaggery into it.

  • Add Coconut into it.

  • Add Banana into it.

  • Add Cardamom Powder and Sugar to it.

  • Add Honey to it.

  • Mix it well, Our Sweet Aval/Poha is ready.

  • Serve it immediately.

Pizza from Scratch


Pizza is an Italian Dish which is made up of wheat flattened bread topping with some  sauce,cheese,veggies,chicken,meat,etc.,baked under high temperature.Here I Shared the recipe of Pizza made in Conventional Oven.

Ingredients:

For Pizza Base:

All Purpose Flour(Maida) 2 Cups.
Instant Yeast 1 Tsp.
Sugar 1/2 Tsp.
Salt to Taste.
Lukewarm Water 1/2 Cup.
Oil 1 Tbsp.

For Topping:

Pizza Sauce or Tomato Ketchup    2 Tbsp.
Grated Cheese as Required.
Onion Slices as Required.
Capsicum Slices as Required.
Tomato Slices    as Required.
Black Olives    as Required.
Italian Seasoning or All Purpose Seasoning    as Required.

Note: You can also made your own Topping as you wish like Mushrooms,Sweet Corn, Chicken etc.,

Method:

  • Take 1/2 of Lukewarm Water in a cup.

  • Add 1 Tsp of Instant Yeast to it.

  • Add 1/2 Sugar and mix well. 

  • Keep aside for 10 minutes to activate the Yeast.

  • Take a wide bowl.

  • Add All Purpose Flour(Maida) to it.

  • Add Salt and mix it well.

  • Add the Yeast Mixture to it.

  • Mix it with a spoon.

  • Knead well with a hand and make a soft dough(Apply Oil/Flour to avoid stickiness).

  • Cover and leave it for minimum 1 hour.

  • The dough rised into double in size.
  • Again Knead it well.

  • In a baking sheet/counter top sprinkle some dry flour.

  • Place the dough on it.

  • Roll it down to form a circle shape.

  • Transfer the Pizza base on to the baking pan.

  • Prick the base with fork as shown below.

  • Add  some Pizza Sauce/Tomato Ketchup on it and spread using spoon.

  • Add some Grated Cheese to it.

  • Arrange the Veggies on it.

  • Add some more Cheese.

  • Sprinkle the Italian Seasoning.

  • In the Conventional Oven, press Convention Mode,set the temperature 190 degree celcius. Place the Mesh Rack into it and preheat. Place the Baking Pan on the mesh rack and bake for 20 to 25 minutes.(The Timing may vary based on the oven you used. For Myself it takes 20 minutes).

  • Take the baking pan out from the oven.

  • Now our Yummy Veg Pizza is ready. Serve hot.
