Chocolate Fudge Brownies By Raji's Smart Kitchen "Cook Food in a Smart Way".

I hope you all are fine.Diwali is arround the corner.We are busy in cleaning and decorating our house also start preparing small snacks to pacifying our small hungry or tiredness while working.On my hubby's birthday I baked chocolate brownies which came awesome and chocolatey.We finished it on that day itself.Here I share that recipe of how to make the Chocolate Fudge Brownies which I have tried.

Preparation Time: 10 Minutes Cooking Time: 30 Minutes Serving: 20 Pieces.

Ingredients:

Dark Chocolate 150 Gms.
Unsalted Butter 100 Gms.
Sugar 1 Cup.
Eggs 3 Nos.
Salt 1/4 Tsp.
Vannila Essense 1 Tsp.
Flour 1/2 Cup.
Cocoa Powder 1/4 Cup.


Step By Step Instructions:
  • First Sieve all the dry ingredients like 1/2 cup flour,1/4 cup cocoa powder,1/4 tsp salt and keep it aside.
  • Greese 8 inches square cake pan with butter or apply parchment paper and keep it aside.
  • Melt 150 gms of dark chocolate and 100 gms of unsalted butter using microwave or double boiling method.Give a good mix.
  • Add 1 cup of powdered sugar to it and mix it well.
  • Add 2 eggs along with 1 tsp vanila essense and beat it well using whisk or hand mixer.Then add another one egg to it and beat it well.
  • Now add the sieved flour to it and give a good mix using spatula.Now our brownie batter is ready.
  • Transfer the batter to the cake pan and tap it well.
  • Bake it for 25 to 30 minutes in a preheated oven at the temperature of 180 degree celcius.
  • Allow it to cool.Cut it into desired pieces as you like.
  • Now Our Chocolate Fudge Brownies are ready.Enjoy...

Line the cake pan.


Sieve all the dry ingredients.


Take chocolate and butter in a microwave safe container.


Microwave it to melt.


Add Sugar.


Give a good mix.


Add 2 eggs and beat it well.


Now add another one egg.


Beat it well.


Add the dry ingredients.


Give a good mix using spatula.


Pour it into the cake tin.Tap it well.


Bake it for 25 to 30 minutes.


Cut it into desired piece.


Now Our Chocolate Fudge Brownies is ready.Enjoy...


Note:

While baking keep an eye on the brownies after 15 minutes because brownies may get burn.

Serving Suggestions:

You can serve Chocolate Fudge Brownies with icecream.

Bengali Style Rohu(Rui) Fish Curry By Raji's Smart Kitchen "Cook Food in a Smart Way".

I hope you all are fine.Long days I have a desire to try fish curry in different style.In our place we normally cook fish with coconut base.I decided to make the fish curry without coconut for that I go through my recipe book and get a bengali style ruhu(rui) fish curry.I buy this Rohu(rui) fish from Licious app and it is very fresh,sliced,well cleaned and well packed.I cook this curry for lunch and dinner.This curry was very simple to cook and its taste was awesome and very different from our very own coconut based curry.My family members also enjoy this fish curry very well.Here I share that recipe of how to make the Bengali Style Rohu(Rui) Fish Curry which I have tried.

For this recipe we need to do some pre-preparation like onion paste,tomato paste.For onion paste,roughly chop 2 medium sized onions and grind it into a fine paste.For tomato paste roughly chop medium sized riped 2 to 3 tomatoes and grind it into a fine paste.Then heat oil in a pan,add the tomato paste along with required salt and a pinch of sugar.Cover and cook till the oil seperates(stir it in between).Now the tomato paste is ready.We can also make in large quantity in advance and stored it refrigerator upto one week.It can used in making curries and gravies. Ingredients:

Ruhu(Rui) Fish 500 Gms.
Onion Paste 4 Tbsp.
Tomato Paste 3 Tbsp.
Ginger Garlic Paste 1 Tbsp.
Green Chilly 2 Nos.
Red chilly Powder 1 Tbsp.
Turmeric Powder 1/4 Tsp.
Garam Masala Powder 1 Tsp.
Cardamom 2 Nos.
Cinnamon Stick 1 No.
Cloves 3 Nos.
Bay Leaf 2 Nos.
Oil 2 Tbsp.
Water as Required.
Salt as Required.
Sugar 1 Pinch.
Curry Leaves Few.
Coriander Leaves Few.


Step By Step Instructions:
  • Clean and marninate the 1/2 kg(500 gms) rohu(rui) fish for 30 minutes by adding turmeric powder and salt.
  • Lightly fry the fish both sides in pan by adding 1 tbsp oil.Keep it aside.
  • For curry,heat 2 tbsp oil in a pan.Add 1 bayleaf,1 cinnamon stick,2 cardamom and 3 cloves.
  • Add 4 tbsp onion paste along with 1 tbsp ginger garlic paste.Saute it for 2 minutes so that the raw smell goes out.
  • Now add the 1 tbsp red chilly powder,1/4 tsp turmeric powder,required salt and a pinch of sugar.Saute it for one minute.
  • Add 3 tbsp tomato paste to it and saute it for 1 to 2 minutes.
  • Add required water and cook it well the oil seperates out.
  • Now add the fried fish pieces in to it.Gently stir it out.Cook it for 3 to 4 minutes.
  • At last add 1 tsp garam masala,stir and cook it for 1 minute.
  • Turn off the stove.Add few chopped curry leaves,green chilly and coriander leaves,cover and rest it for 10 minutes.Now our Bengali Style Rohu(Rui) Fish Curry is ready.Enjoy...

Clean and marinate the rohu fish for 30 minutes with turmeric powder and salt.

Turn off the stove,add curry leaves,coriander leaves,green chilly to it.


Cover and rest it for 10 minutes.


Now Our Bengali Style Rohu(Rui) Fish Curry is ready.Enjoy...


Note:

For this recipe we want to lightly fry the fish before we put it in the curry.For healthy fry we can also bake the fish in oven by transfering the fish to the baking tray,bake it for 10 minutes then gril(broil) it for 10 minutes.

Serving Suggestions:

This Bengali Style Rohu(Rui) Fish Curry recipe can be served with rice.

Simple Side Dish Beetroot Capsicum Kurma for Chapathi,Roti,Paratha,Poori By Raji's Smart Kitchen "Cook Food in a Smart Way"

I hope you all are fine.Daily for chapathi,poori we cook different side dishes like paneer masala,veg gravy,non veg gravy,etc.,For today's lunch,I tried a kurma recipe with beetroot and capsicum for chapathi.It was awesome taste and my family members enjoyed it very much.Here I share that recipe of how to make the Simple Side Dish Gravy Beetroot Capsicum Kurma which I have tried.

Beetroot Capsicum Kurma is a simple and easy kurma for chapathi,poori.You can also pack this kurma for lunch with chapathi.Here for this kurma I didn't use coconut instead I grind 2 spoon of kurma to get a thick consistency.You can also add coconut paste to it or you can cook it in a pressure cooker to get this consistency.Come on lets see the required ingredients and the step by step instruction for this recipe.

Ingredients:

Beetroot(Cubed) 2 Nos.
Capsicum(Cubed) 2 Nos.
Onion(Sliced) 2 Nos.
Tomato(Sliced) 1 Nos.
Green Chilly 2 Nos.
Ginger Garlic Paste 1 Tsp.
Turmeric Powder 1/4 Tsp.
Red chilly Powder 2 Tsp.
Coriander Powder 1 Tsp.
Garam Masala Powder 1 Tsp.
Green Cardamom 1 Nos.
Cinnamon Sticks 1 Nos.
Cloves 3 Nos.
Fennel Seeds(Perujeeragam/Sombu/Saunf) 1 Tsp.
Coconut Oil 1 Tbsp.
Water as Required.
Salt as Required.
Curry Leaves Few.
Coriander Leaves Few.


Step By Step Instructions:
  • Heat 1 tbsp coconut oil in a pan.Season with 1 tsp fennel seeds,3 cloves,1 cardamom,1 stick cinnamon and few curry leaves.
  • Add 2 sliced onion and 2 green chilly,saute it for 1 minute.Add 1 tsp ginger garlic paste,saute it well until the raw smell goes out.
  • Add a sliced tomato,saute it well by adding required salt.
  • Add 1/4 tsp turmeric powder,1 tsp coriander powder,2 tsp red chilly powder to it and fry for 1 or 2 minutes.
  • Now add the cubed beetroot and capsicum,mix it well.Add 1 tsp garam masala powder and saute it for 1 minute.
  • Take 1 or 2 full spoon of gravy in a mixie jar and grind it to a smooth paste and keep it aside.
  • Add required water to the remaining gravy,cover and cook the vegetables well.
  • Now add the grinded paste to it,mix and cook for 1 minute.This makes the gravy thick.
  • Turn off the stove.Garnish with few coriander leaves.
  • Now our Beetroot Capsicum Kurma is ready.Enjoy...

Now add the grinded paste to it and cook for 1 minute.


Turn off the stove.Garnish with few coriander leaves.


Now Our Beetroot Capsicum Kurma is ready.Enjoy...


Note:

For kurma recipes coconut oil is the best choice.You can also use other cooking oils except strong flavoured oil like groundnut oil,sesame oil,etc.,

Serving Suggestions:

This kurma recipe can be served with chapathi,poori,pulav,dosa,idly.
