Red Amaranthus(Sengeerai) Sambhar


Red Amaranthus(Sengeerai) Sambhar is one of the commonly cooked dish in Tamilnadu,India which is served as sidedish curry for rice. Here I Share this recipe that I followed by my Mother.

Red Amaranthus(Sengeerai) is the key ingredients of this recipe.It contains many nutrients which helps for our good health.It is one of the low calories and high fibre content food which helps to reduce our weight.70% of vitamin C is present in 100 gms of amaranthus which helps to boost our immunity level.This has other benefits likes improves eyesight,prevents anemia,reduce hair fall and grey hair.Here I Share the links of some of the recipes that are cooked using Red Amaranthus(Sengeerai).


Recipe Overview:

In this Post I share the recipe Red Amaranthus(Sengeerai) Sambhar. It is one of the easiest sambhar.First we pressure cook the toor dal.Clean and chop red amaranthus.Fry shallots(sambhar onion),amaranthus in a pan and cook in tamarind water.After that add dal and sambhar powder.Boil it well.Garnish with Coriander Leaves.This Dish can be the served with hot rice.

Ingredients:

Red Amaranthus 1 Bunch.
Tamarind Lemon Size Soaked in 1 Cup of Water.
Shallots(Sambhar Onion) 15 to 20 Nos.
Toor Dal 1/4 cup.
Sambhar Powder 2 Tbsp.Click the link to Buy.
Sugar 1/4 Tsp.
Salt to Taste.
Cumin Seeds(Jeera) 1 Tsp.
Asafoetida(Hing) 1/4 Tsp.
Mustard Seeds 1 Tsp.
Curry Leaves Few.
Coconut Oil 1 Tbsp.
Coriander Leaves for Garnishing.

Step By Step Instructions:
  • Pressure cook toor dal for 2 whistle and keep it aside.
  • Clean and chop the red amaranthus.Soak lemon size tamarind in water for 30 minutes.
  • Heat oil in a pan and fry the shallots until soft.
  • Add the red amaranthus and salt to it.
  • Add the tamarind water to it and cook well until amaranthus strinks.
  • Add the cooked dal to it,mix and boil for 5 minutes.
  • Now add the sambhar powder,mix and cook well until raw smell goes out.
  • Add sugar to it and cook for 2 minutes.
  • Add some coriander leaves.Turn off the stove.
  • Heat oil in a tadka pan,season with mustard seeds,cumin seeds,asafoetida and curry leaves.
  • Pour the tadka over the sambhar.Now our Red Amaranthus(Sengeerai) Sambhar is ready.
  • Serve with hot rice.

Prepare seasoning/tadka.

Pour the tadka over the sambhar.

Now our Red Amaranthus(Sengeerai) Sambhar is ready. Serve with hot rice.
